Wicked ,Wicked ,Wicked.....
One thing I noticed is that a chocolate cake is always called a chocolate cake....so that is why I now add a prefix to a cake recipe....at least that reminds me of the recipe to refer to and the taste....
this one is wicked because it is not what it seems......It
has only 65 mils of oil...yay.....
Isn't that wicked....all the fun and the least possible amount of fat...almost like having a series of cocktails minus the hangover the next morning......not to mention a cap on the idiocities at the moment.....
But here pigs do FLY!!!!
As long as you don't add extra calories with the decadent chocolate/butter/cream icing....
This recipe is a tweaked recipe from one of Nigella Lawson's cook books....
I'm the type who takes cook books to bed instead of novels.....most of the time....
I know... spent too much time alone...thankfully sweet hubby of mine is on his way home just as I blog.....

so for this
Wicked....Chocolate Cake...
you need..
3tbspns of cocoa
125 mils boiling water
250gms flour
1 tsp baking powder
180 gms caster sugar
65 mils vegetable oil...
4 eggs separated
see ...not a twinkle of the white in the yolks.....
practice does make perfect..
and not to loose track
1 tsp vanilla essence/extract(depends on which part of the world you inhabit)
a few drops of lemon juice
great...now set the oven to 180C and pre heat...
sift the flour ,baking powder and a pinch of salt thrice...all things sweet need a pinch of salt even if it is not mentioned...
See.......... sifted...
OK now blend the cocoa with the hot water
Dump the oil ,egg yolks and vanilla,sugar and flour mix to a bowl and mix well....
Now put in the slightly cooled cocoa decoction and beat...
Keep the tin oiled...I wanted to do something pretty but should have stuck to a round tin....It came back to haunt me...like ASAP!!!
Wash the blades...the machines should come with two sets of beaters...just to save the effort...make sure they are DRY.Add the few drops of lemon juice to the whites and whip them up....remember Salman khan's "bum" slapping in Character Dheela" if you don't have an electric beater....You need to up the ante.....Quite an interesting question...who would you like to do this to??hmmmm...the mind so rambles..
So now PEAKS.....then put into the chocolate mix and fold in...
Gently...you don't want all that beating to go to waste...
This is what happens when you want to "maaro"style....you go scurrying for paper doilies while the oven is beeping angrily...you so don't want a meringue(beaten egg whites) cake to sink.....
OMG!!this so looks like a yetis paw!!before it went into the oven...
The cup cakes came out in 16 Min's while the big one needs 30...so if you do the sensible thing and put all your eggs In one basket...it should not take you more than 35 Min's...be sure to test with a skewer first....
The cup cakes were offered to the learned one...who ever so often advises me to abstain.....from SUGAR...

and this is the cross section of one cup cake. Pic taken with the macro off....enables one to get a gr8 close up...see the crumbs....
