Whole Wheat and Jaggery in my Gingerbread Man (without Molasses)

Posted on 04:27 by Unknown
The Gingerbread Man is ubiquitous...Every blogger is overdoing the Christmas fever and the Christmas cookies.
And sweet child has been pestering me to let go of the red pen and the answer sheets and bake...
The whole wheat is just to add some extra goodness into my gingerbread cookies.  No molasses available off the shelf in Jalandhar so honey was the only recourse . And brown sugar is at least 5 km away from my house...
Jaggery or Gur (we used Gur ki shakkar or powdered Gur to make mixing easier) is healthier than plain white sugar ,mind you.
Home made White butter and refined vegetable oil took the bite out of the butter.
The first batch of cookies were studded with heart shaped sprinkles before baking , but that was a bad idea as the sprinkles melted into nothingness.
The next batch was plain, with more ginger powder and royal icing frosting and pretty sprinkles.
Other than the extra sugar high, the cookies were awesome with green tea.(I have to be prudent -cookies and coffee would ruin my diet plans...so a sugar free watery green tea is a perfect accompaniment to my gingerbread men).
Restraints are difficult.
Ask me...that's how the cookie crumbles and that's what sweet dog prays for.
Try these. ..
The cookie cutters are available easily, the dough is easy to make and roll and the cookies take only 12 minutes per batch.
Well worth the un-effort.

For the

Whole Wheat and Jaggery in my Gingerbread Man (without Molasses)...

You need

2 cups plain all purpose flour
1 cup whole wheat flour
1 cup packed brown sugar or Gur ki shakkar
1 1/2 cups  butter -I used 1 1/4cup butter and the rest refined vegetable oil
1 egg
1 tsp bicarbonate of soda or baking soda
4 tsp ginger powder
1 tsp cinnamon powder
1 tsp nutmeg and clove powder -I used all spice powder
1/4 cup honey
1 tsp vanilla essence

In a bowl mix well all the powders. Whisk or use a blender not a sieve.  There are people who have dissertations on why dry ingredients must be mixed and not sifted.
In another bowl blend the butter ,oil and sugar or Gur ki shakkar well.
Add in the egg ,honey  and the vanilla essence and blend well.
Whisk in the dry ingredients till your blender blades don't move no more, then remove all the dough from the blades and knead in the rest of the dry stuff.
Place in the form of a brick on al foil or film ,shape and pop in the fridge to harden.
The dough is soft so don't worry on that account.  All exercise in rolling dough must be done else where.
You'll need to roll out pieces of the dough between sheets of parchment paper or cling film to 1/3 an inch this. I like the cookies a little thick not like crackers.
Remove the top layer of film and cut out with flour dipped cutters placing the cookies on the baking sheet.
Re roll scraps of dough as you  haven't altered the dough by using flour to roll the cookies. ..
Brilliant.
Oven on at 170C /325 F
Trays in one at a time for 12 13 minutes. ..the cookie will be done and browning from the base but soft from the top...
Take them out...
5 minutes later with the help of a spatula or knife, place them on a wire mesh to cool.
In the meanwhile your second tray will be done...
Roll baby roll and do more cookies. ..
30 large cookies ir 45 small ones like mine. ..

Frosting is the blog post for tomorrow. ..

So what are you baking today???

Green Mango Relish in a Sweet and Sour and Spicy Avataar- Chunda

Posted on 09:00 by Unknown

Chutneys and Relishes have a very special place on the dining table.
An accompaniment to all foods, bland or spicy, some veggies that are not worth even serving on the table-like turnip and lauki/ghiya/bottle gourd...
Makes it all palatable.
A little tang,a little yummy wow factor.
Awesome. And I go and do the most Un-Gujarati(alcohol is prohibited in the Indian state of Gujarat,so people find many ways to drink it) thing to Chunda.
Serve it with Vodka.
"Many demons lurk in the Russian Firewater."
Not my lines-Clive Cussler's!
This little golden relish has the power to tame those demons of the Russian Firewater. Hidden behind the tame hors d'ouvres or canapes is the deadly bottle of pure Russian Romanov. Devils Indeed!
About the Chunda- or the sweet and sour and spicy mango chutney made with absolutely zero oil-its Gujarati in origin and has been exported world wide.
Different from the cloyingly sweet jams and preserves of yore, this one sure packs a punch.
Yours truly is not too big a fan of spicy sweet stuff, but this one is a perfect balance.

I used salted cream crackers as the base, added a small slab of Ricotta cheese-slightly different to the making of paneer/cottage cheese and a better ,smoother flavour, topped with a generous helping of Chunda and a bit of caramelised onions.
It all began from here.
There is a nursery behind my house, and since hubby dear patronises the gardener for his requirement of seeds and stuff,I was able to glean a kilo and a half of the firmest, sourest and freshest mangoes.
That's why they say that the best things in life are free.
You can see the mangoes hanging for their dear life, and a few parrots definitely angry at the nursery owner's generosity.
for the

Green Mango Relish in a Sweet and Sour and Spicy Avatar- Chunda ...

you need

1.5 to 2 kg firm, unripe or semi(really semi) ripe mangoes
500 gms to 750 gms sugar(depending on the sourness of the mango)
1 to 1 1/2 tsp black /rock salt
1/2 tsp turmeric
1/2 to 1 tsp red chili flakes
1 tsp roasted cumin powder
2-3 tbsp watermelon seeds(magaz) or shredded almonds or pine nuts or raisins or none at all(optional)

These are my mangoes, washed, dried and peeled. I shredded them in my food processor. Had they been semi ripe,I would have to grate them manually.SO grate according to what you have.
Use a stainless steel deep dish. The acid in the mangoes will spoil otherwise.Add in the salt and turmeric powder and cover and set aside for 15 minutes.
Add 100 gms of sugar to the mangoes and mix with a stainless steel spoon, till the sugar dissolves.Set aside ,covered for 10 minutes.
You'll find the mango and sugar forming a syrup.Keep adding the sugar, mixing in and then setting aside till you use up most of the sugar.Taste.
You may want it sweet or not. You are the best judge. You can add more  sugar to this. Now set it on a low flame,I used my induction cooker at low power, and cooked this relish for at least 25-30 minutes. You need a one thread mango-sugar syrup here.
Roast the nuts, cool and add in.
Cooking further, till that syrup thickens. Keep tasting for sweetness, you cant add sugar after you stop cooking ,so it has to be now or never.
OK, the syrup was done. How to test for one thread.Take a drop of the syrup on your thumb and touch gently with your index finger. When you separate them, the stickiness will pull in one thread. If it is not one thread, cook some more.
Add in the chili flakes and the roasted cumin powder and stir.
Cover with a cloth napkin to cool.
Sterilise glass bottles and fill them with the Chunda.Be sure that you sun it for at least 2-3 days.

The Indian summer sun will ensure that your relish stays preserved for a whole year.If you don't eat it up by then -that is.

Serve with cheese-the combination of slightly salted cheddar and the sweet and spicy and tangy relish is awesome.
Or do what I did,use this to serve as a snack to your guests.
Cracker,a slice of homemade ricotta or herbed cottage cheese, and topped with fried ,caramelised onion or maybe olives, or chopped gherkins, maybe capers, shredded basil leaves, maybe diced sweet peppers...
Whatever!
And Enjoy.

Don't forget to pucker your lips and smack them ,after you taste this Green Mango Relish in a Sweet and Sour and Spicy Avatar- Chunda .

Easy to make and adds value to many a bland meal.

Try it...

Cookies-Singhare Ka Atta cookies with cardamom -Invoking the goddess and some detoxifying

Posted on 07:00 by Unknown
That time of the ear again...
Time to invoke your faith in the goddess and all things holy...
Time to bring your gratitude to the fore and pray for the goddess to keep you safe and happy ...

And refrain from all things that are made of grain and are irresistible...
Like cookies and bread and all things meaty...
So we fast and and feel good...

And midweek we start getting cravings...
Cravings that will drive you nuts...
Cravings for cookies...
Am I the only one??
I know there are laddoos available and then there are Indian sweets galore...but the satisfaction that one cookie with a cup of coffee gives you...beats all else.
And in the middle of the fasting...I missed the bite of the cookie with my cup of coffee.
There had to be an easy way...right??
Then I remembered ...last Navratras..I made Buck wheat flour Crackers-crackers with kuttu ka atta and sesame seeds...
But I was dying for sweet cookies...
So sweet with cardamom ...
Like Whole wheat atta and semolina cookies.
So ...
Now with singhare ka atta- or flour made from water chestnuts...dried of course.
Singhare ka atta is  used a lot in Shivratri...Specially for the halwa...
But I decided to cookie it.

for the

Cookies-Singhare Ka Atta Cookies with cardamon-Invoking the goddess and some detoxifying...

1 1/4 cup singhare ka atta
1/2 cup sugar powdered with 4 cardamom
1/2 cup clarified butter or desi ghee

You cant use butter here, as butter has salt...so ghee it is.
I put back a tbsp of the clarified butter or desi ghee into the container and replaced it with ...water!At least make an effort at lo cal...My cookies were thus not that crisp...a little hard -but what ever!
The clarified butter or desi ghee I creamed and added the powdered sugar. I didn't want to use icing sugar as it contains some cornflour...
Now creamed in...you can see the cardamom flecks and I could smell it...

Now the singhare ka atta in...

Oven preheated to 180C/350F.
Atta kneaded together with a bit of water... I reduced the clarified butter or desi ghee...you can go with a wee bit of ghee more...
Small balls of dough flattened on the cookie sheet.

That's how I made the balls...uneven they were...but whatever... was just dying to bite into the cookies the shape was immaterial!

Mid way though the cookies smelt fine, but didn't look cooked enough. So I flipped them over and baked them for a further 10 minutes...
And Now out of the oven cooling...I had a few cookies while they were still warm and tempting...

And ready for the photo shoot!

Enough to last me the next 4 days???
I'll eat a real cookie after my prayers on Friday...so I think I'll last till then.

Jai mata di!

Daring Baker Again- Seedy Raincoast Crisps and more!

Posted on 08:07 by Unknown
Crackles and Crunches...
A cup of hot java to dunk it into...
Loads of seeds...
Zero Fat!!
And Totally less Sweet!
The Daring Bakers Challenge after two months...
Totally difficult to do while you are shifting houses...
That was one thing I missed...every time I checked out the stuff to be made for that month...
At last , now,I'll be faithful to my cause celebre...
Bake Pretty Stuff and Eat Pretty Stuff...
I love crisp crackers...especially stuff you can dunk into coffee or tea...
And with this months challenge, I loved the fact that the only added fat was the fat /oil used to grease the baking pan...
All the fat in the nuts and seeds is great fat!
So that will do!

So beautifully crisp that thecrackers stood up like a house of cards...
Lace like and delicate...
I' m proud of my prowess!
And to beat the sadness of not being part of teh daring bakers , I made savoury Onion and sesame seed crackers.
How is that for a double whammy!
Rustic and simple and Spicy and Yummy ....Yummy...
OK that is the next post...

This months inspiration is from Sarah...

Ta-da!!!!!

Blog checking lines: Sarah from All Our Fingers in the Pie was our February

2013 Daring Bakers’ host and she challenges us to use our creativity in making

our own Crisp Flatbreads and Crackers! Smile

for the

Daring Baker Again- Seedy Raincoast Crisps and more...

you need

1 cup flour
1 tsp  baking soda-bicarb of soda
1/2 tsp salt
1 cup butter milk(I added 1 tsp vinegar to 1 cup milk)
1/8 cup packed brown sugar-I used gur ki shakker
1/8 cup honey
1/2 cup raisins
1/ 4cup chopped pecans-I didn't use any...walnuts were an option ,but I decided against
1/4 roasted pumpkin seeds-I used watermelon seeds
1/8 cup ground flax seeds
1/8 cup roasted sesame seeds
1 tbsp fresh rosemary-I used dried rosemary

Preheat the oven to 180C/350F...and grease a loaf pan lightly-8 inches by 4 inches...
I started just before dinner that day, as the crisps had to be baked as a loaf and then cooled and sliced and re baked...
So one day was not possible...
These are the watermelon seeds roasting-also called MAGAJ.
A little heat and they begin to pop and smell heavenly...
done!
Do the sesame seeds too...
Into a bowl all the seeds and stuff...
And the popped seeds...
And lastly the butter milk mixed in...
Mix and pour into the tin...
Done in about 40 minutes...needed no poking as the sides gave way...so I knew it was cooked.
10 minutes later, turned out of the pan...
I wrapped this in a kitchen towel and in the bread box and left it to cool overnight...
Next day...
Filigree thin slices-2mm maybe 3 mm thick...
On two cookie sheets...the best investment made for my Morphy Richards oven...
Baked at 150C or 300F for 15 minutes on each side...
I managed to burn a few..
So you need to be careful...
But the crunch and the aroma of the seeds and rosemary baking was awesome...

Along with a cup of coffee...
Caramelised Raisins...
Crisp seeds...
Yumm!
I'm crunching through these raincoast crackers (hmm why raincoast??) carefully...my root canal treatment has left the right side of my face a little numb...
After two lidocaine injections...just opening my mouth is a pain...thank god these crisps are slim!
Slim...
The prospects of them staying in the jar for too long...
Slim...
Dreams...

Back sooner than you think...

Egg Free Orange Silk Cheesecake-Chocolate and Orange...go hand in hand

Posted on 21:13 by Unknown
A cheesecake...that had to be chocolate  and egg free and beautiful...
And if possible...low in fat.
Well almost...
An almost Birthday cake for friend Kanchan Bhartari...
For birthdays, the last thing we reveal are ages...
We are, forever young.
That is why we keep company...
A birthday is not always about the cake.
Its about the  friendship and good times and good food and chocolate.
A cake would have been superfluous here...as she had already baked. So this was a take on a chocolate tart that I had seen on  Deeba's site , but have not been able to locate it since.
I love the flavour of Cadbury's Orange Silk and I wanted to recreate it.
I cant call this low fat, but...OK ,that thought  was the genesis of  A reduced fat Orange Silk Cheesecake.
It may not look that impressive...but the flavours were  bang on!
I was minute maid for the day, I even managed to incorporate the pulp!
Super Easy, and easy on the palette...made a refreshing dessert.
No reason to make a simple chocolate pudding the next time you decide to attempt something fancy.

for the

Egg Free Orange Silk Cheesecake-Chocolate and Orange...go hand in hand...

you need

230 gms digestive /chocolate biscuits
80 gms (or more) butter
1 orange
1 tsp gelatin
5-6 tbsp icing sugar
200 gms semi sweet chocolate
400 gms non dairy /dairy cream-I used Amul
200 gms cream cheese- I used fresh yogurt, which I hung to remove all the whey
30 mils Orange twist Remix Vodka-Optional

Start with the base .
The digestive it was, Oreo would have tasted and looked prettier.I whizzed the digestive biscuits to a fine powder and added...the zest of half an orange. I had one leftover in the fridge ...so one it was .
Into this I added about 40 gms of the butter -that I melted in the microwave.40 gms is not enough ,you need at least 80 gms.I promised reduced fat- reduced fat I deliver.
I added the juice of half an orange.
I had to make the crumbs bind...so any wet will do!
Into the loose bottomed tart dish...One large tart tin and one small ...
Set to set in the fridge.
Now the cream and the chocolate.Pour 200 mils/one tetra pack of amul UHT cream in a sauce pan that will fit in your fridge.Place on heat and just before it comes to a boil...dunk the chopped chocolate.
You don't see the bubbles here only because the heat is turned off...but the cream needs to be hot or else the chocolate will not melt.
A bit of decadence...the rest of the butter.
Whisked well to let the butter make the chocolate glossy.
Et Voila...
The leftover rind of the orange I chopped fine and added it while the chocolate ganache was still warm essential oils ,you see...
Mix them well and stow into the fridge to let it set.
That was why you needed the exact size of the pan!
All this was done in the dead of the night. You know what would have gone really well.Orange flavoured ...you guessed it....
I'm a veritable advertisement for Smirnoff Vodka!
Chocolate and Orange and Orange twist Remix ...yay!
What a happy/hippy combo! But sadly...Kanchan was  teetotalling for a week.So we skipped. One friend would not have been happy...what say Monica Mallik??
OK , now next morning..
The remaining 200 mils whipped with the sugar till whatever peaks form. Amul UHT does not rise to the occasion...as in you can not get any peaks...so whenever your hand tires, drop the hand held whisk.
Now bring out the semi solid ganache and whip it to submission...
And you get something like this...
And the remaining orange juice...sitting over warm water with the gelatin in.
So now, the hung curd ...
I whipped it into the chocolate mix to make it lighter.
Light in texture and colour.
A quick whip of the cream again...And all folded together...now the gelatin and orange juice mix in.
The mix tasted like a mousse ....a lot chocolatey a wee bit orangey and a little tangy...the taste of the hung curd.
I got one large tart, one small tart and one bowl of the cheesecake mix.
And in the fridge for a few hours...
Is this ethically a cheesecake?I know not...It had the integrity and the texture of a cheesecake...Sliced gorgeously ...and tasted wow.

A little dusting of cocoa, a shard of chocolate...smooth as silk.
A little reminder of this flavour...never too far!
A little tribute to the taste buds...
A little tribute to friendship...
A new territory...that children loved too...
A new way to say happy birthday...

So why are you not baking today???
