Here it does not rain when it rains,it POURS!
So appetites change accordingly,and cravings reign supreme...this time I fed my friends.....
and this is something that I started out with...when I was a newly wed and wanted to serve a snack not out of a packet......Loads of bread and cheese available always....
My oven and I were probably joint at the hip in another life....
Hadn't made these since a long time...today seemed just right...
Cheesy triangles served with the ubiquitous ketchup and Mustard sauce for the nasal twang!
Served Hot with steaming mugs of Hot Chai!
Next time lets try them with Chai Latte!

so here goes...
for the
Cheesy Cheese Triangles....
you need
4 slices of white bread
4 tablespoons shredded cheddar cheese
2 cloves garlic crushed
1 egg
1 each finely diced onion and capsicum and seeded tomato
2 finely chopped green chillies
1 tsp mustard sauce/powder
some chopped coriander
Salt and pepper to taste,Red Chili flakes for the zing
Pre heat oven to 220C and start with a large bowl....
Prepare the vegetables
and the onion
and the garlic and chillies
If you have spring onions use them instead -use the greens generously they really add the wow factor to the toasts
In the bowl tip in all the veggies and add the mustard sauce...If you are Bengali you can also use kasundi...
Now add the egg..-the yolks alone give a more intense flavour but then you are left with the 2 egg whites and a temptation to make something sweet with the whites...so I threw in the whole egg.....
and now for the cheese...1 Tbsp per slice of bread....
Make sure you break up the cheese well and mix thoroughly.Adjust the seasoning to taste,keep it sharper than you prefer...on baking the flavours mellow down...as with age....and spread them on the slices of bread.
On the high rack...quite like royalty...they go in at 220C for at least 13-15 minutes to cook,get crisp on the outside and gooey inside-like so...
So now for the plating....remove the sides and cut into 4 triangles ...
Ta Da...
And now the final presentation..
You don't really need the ketchup...its more like eye candy here.
The mustard sauce lends a piquant taste and the veggies reduce the guilt...but in small doses of ..Cheesy Cheese Triangles -the good things are Excellent!
And you generally do not have left overs....
so another reason to make them when friends come over.Treat your friends this time....and don't forget the Chai!
