Cookies are tricky ...If I may say so...one never really gets the commercial ,trans fat laden (almost bin-laden"y")cookie like texture
No matter how much or how less butter one puts in...
Been wanting to try peanut butter cookies for a long time now ...
Finally did it today.
and almost like after the first time of finally cracking a trigonometry problem...."what was the big deal about it?" kind of feeling came over me.....
and then one wonders ...why did I not try it earlier?
so after the procrastinations aplenty....
with much fanfare....
Straight from the oven...and into my hands.....they need to cool before I can plate them,so a picture in a serviette has to suffice....was kind of like a labour room...with the cookies being delivered onto this world by ME!...wonder if it felt like a new born baby...much loved..this was after all my labour of love..
Enough with the ramblings...
lets get on to the brass tacks..
The recipe was of course taken from my tome .....Fabulous Cakes And Bakes
For the
Classic Peanut Butter Cookies....
you need ...
220 gms of butter
310 gms flour
1 tsp baking powder
1 tsp baking soda
2 eggs
250 gms peanut butter
420 gms caster sugar...I used ground sugar
As usual I didn't have peanut butter ...things are never around when you need them...classic example of Murphy's law working overtime...especially in m y house...
so I took 250 gms of lightly salted roasted peanuts
added a tablespoon of vegetable oil
and whizzed it till mildly chunky....so it was ready to go... SKIPPY brand peanut butter it was not....but I would rather use that on a slice of bread.....
It looked like this
In a large bowl I creamed all the butter and added this peanut'"ty" mix to it....
and dumped the two eggs
and the sugar..
to get a thick batter.Now unplug the beater and get down and dirty ...err use your hands to work in the flour and baking powder and baking soda (which must be sifted together).
Now you get a dough that doesn't quite come together......it needs to rest after being whipped and whipped.... should look a little like this...
Let it chill for an hour and then flour your work top and roll out half the dough about 5/8 cm thick into a rectangle.
I then ran a fork over it and stamped out the cookies with a cookie cutter...
The picture of the cookies on the tray got floured out...so...
for the next lot I decided to put an egg wash...paint some beaten egg over the dough to give it a nice colour and sprinkle with chopped peanuts too...
and instead of stamping out rounds...just cut the dough into squares...and bake them...you can get your oven on to 180C and pop the baking tray in for 10-13 Min's...they then look like this...
You now need to let them cool or they will not be crisp....

Monica Mallik ...since you are such a peanut lover...these were for you...I hope you and your family enjoyed them.....
Go on...try a batch of these...next time I'll add some cinnamon powder to these....I'm sure they will be Divine then too.....If you do so ....do let me know...treat your family and friends to cookies baked from scratch.....
