Makes you realise that hope is what drives us all.
We are all living the same lives,no matter which side of the oceans we inhabit...the crux of
the matter remains the same.
At the end of the day the most important thing is hope.
Hope is what drives us to excel...
Hope and chocolate.
Chocolate and Butter.
You celebrate with chocolate and then you push yourself to limits you never thought
you'll reach, you'll contort your body into the oddest positions possible, all in the name of
yoga...
you'll push yourself to walk that extra kilometer on the tread mill ...just maybe 15 more
minutes of Pilate's,maybe half a km more...
All for that one small bite of that yummy chocolate cake...or a butter laden chocolate
shortbread.

Honest to goodness...I never thought there was any difference between a shortbread and a cookie.
There is, there is...
The butter!
And the butter!
Which makes all things bEtter!
In this case, the shortbread. Not round and thick and chewy like a cookie, but square and crisp-ish and buttery and yummy!
Sadly I cannot partake off too many goodies..so this was just a wee bit taste.But the butter and chocolate did make the shortbread bEtter! I loosely adapted the recipe from smitten kitchen , I skipped the coffee altogether. Espresso means, a trip to Cafe Coffee day, which is like really FAR! South Indian Coffee, would have done nothing to the shortbread and Bru Lite(my current Fave brand of coffee) does not cook too well.
So chocolate and butter had to hold the fort alone!
And how they did , with vanilla standing to attendance!
Let the music play, and lets do one more round of yoga. So worth the sweat and the endorphins!
This shortbread I made before I went to mum and dad's...so was super enthusiastic.
The small break was like a breath of oxygen to a drowning fish...yeah! If only you understood!
Food talks better.
So lets do food.
for the
Egg Free Chocolate Chip Shortbread...
you need
220 gms butter at room temperature
2/3 cups icing sugar
1 tsp vanilla essence/extract
2 cups flour
3/4 cup or 100 gms chocolate chips
a hand full of chopped walnuts..
That is the beauty of shortbread...so few ingredients. Shortbread has only 4 basic things going for it...butter, sugar, flour and vanilla. Chocolate , is comfort food!
Simple.That is the bEtter butter.
Warm and soooo easy to cream...
Now add in the sugar.Icing sugar is good as it blends well...
Cream till well blended and add in the vanilla.
Pour the flour over and now mix the it all together. You'll get a soft malleable dough.Pop in the chocolate chips....I use chipped chocolate....so the gargantuan looking chunks of chocolate.
All together now.I tipped in some walnuts too. Reason says chill this now...
But I did not reason with time. Oven preheated to 180C/350F.
Sheets of cling film on the work space...who wants to clean the excess flour-not me!
One sheet on top and rolled to 1/4 inch thickness.
And cut into hopefully even short breads. Since there was no flour used to re roll the dough, the proportion of the dough remains right and if it is warm...just pop the dough into the fridge a while.
On my cookie sheets.
A few pricks of a fork and into the oven for 22 minutes.
The aroma was awesome!!!!
