Quite oxymoronic” isn’t it? Healthy and brownies just don’t go together…the loads of butter and the loads of chocolate and of course the sinfully un healthy plain flour….Ok the flour only constitutes a wee bit of the un healthy stuff.
Absolutely bad, the white stuff is-no fibre, no vitamins Nothing!
As if you are going to get your RDI from 1 %^#^%# piece of a chocolate brownie.Yup, you better believe it... I love the occasional swearing…you’d have to be totally “nun” like if you don’t swear. In fact friend Bhavna Panwar has a son, who so loved to swear at all and sundry…even the passing helicopter, or the pet turtle or the household help.
I don’t approve of the methods she and her husband employed (no, they are not the cane or whip wielding types) to rid him of this habit, I must say I was most disappointed when I heard that he dropped a little color from his language. Sweet child o’mine does not approve of the swearing bit; he prefers to use his fists. Quite the angry young man he is.
Well back to the story of the Whole-wheat Healthy Brownies. It so happened that it was a dark and stormy night-with the storms rising in our tummies…when we decided to act as renegades…to our new year resolutions (This was the 30th of December BTW). our resolutions to not eat anything sweet after dinner was doomed even before they had had a chance to breathe. But that’s life. Cruel!
Obsessing about his Galaxy Pegasus Beyblade (the return of the prodigal…Beyblades have come and gone…this is the third revival) sweet child was in need of some sustenance….and it had to be SWEET!
He was the one who went searching for a new HATKE recipe for chocolate cake….so the healthy bit.
Possibly the simplest thing we made in a long time and a chance to use a new mould. This time a heart shaped silicone mould for a small cake –bought by friend Ritu Sharma from her quick trip to Mumbai.
For the
Whole-wheat Healthy Brownies...
You need
¾ cups Whole-wheat flour
2 eggs
¾ cup sugar
100 Gms butter (for those who want to use oil or get butter in differ rent sizes than us...100 Gms butter equals ½ cup)
100 Gms cooking chocolate
¾ cup whole wheat flour or Atta
1 tsp baking powder
½ cup chopped walnuts (optional)
2 tbsp rum (brandy or milk or water, whatever you wish to be drinking at the mo!)
The butter is a wee bit extra, so butter and flour your moulds with the butter from the ingredients.
Before you start, pre heat your oven to 180C/350F.
Start with the eggs and the sugar...
Since it was the mess maker who had demanded (no such thing as request exists in his minds…yes…I know I brought him up all wrong!) the brownies, he had to be the one not photographing. Needless to say that after his exploits in the kitchen, the walls need to be cleaned of all the splattered egg bits. Had we been in Ethiopia, we could have had cakes off the wall, quite like dung cakes...perish the thought.Would’NT trade Ranchi for Ethiopia.
Right, into the egg and sugar, we added the butter, melted….all this while I was being briefed why the Galaxy Pegasus was better than all the other Beyblades combined, as if he is going to write his dissertation on them…the only thing that comes to mind…darling I don’t know why I go to extremes…
Sift the whole wheat flour or Atta with the baking powder.
In a bowl place the cooking chocolate over a pan or simmering water and add the rum or brandy or whatever into it, stir to help it melt…the elixir of life (alcohol) always needs a helping hand!
When the chocolate is melted....
Right, he whips up a mean batter, no?
When the chocolate is melted and the eggs are beaten, add in the chocolate-making sure you scrape the bowl…here sweet child never lets me bother. Sometimes I wonder what Romeo the dog must be fantasizing about…helping us clean the dishes?
Now dump the beater, fold in the flour, this is the time to add the nuts, if you are using them...
Thats the batter...deceptive,,,you would never guess the amount of chocolate in it...If you want to use a n aluminium pan an 8" by 8" is appropriate.
Since the mould was small, I added 5 mini cup cakes too…I first thought microwave...but went with convection...the glass was occupying maybe status.
Done, now pour the batter in and level it…we don’t want the Alps in the pan.
Into the oven, 30 -35 minutes…something interesting happened GOSSIP of the family drama kind and I completely forgot the cup cakes…so they were eaten as cookie discs…see we don’t waste anything.But they were not photographable...so we skipped the cake discs,,,
To unmold the cake we had to wait an hour…silicone!

Anyway, those brownies didn’t last to tell many tales…
The making and baking was fun…then they say you don’t spend enough time with your kids!
