Hey! I so love you that I’ll bend over backwards to provide recipes for all those ova avoiding ,chocolate loving people who inhabit Blogosphere!
From all of my travels into cyberspace and the food world, I have come to realize what an important part eggs play in the human diet. I’ll have you know that eggs are the most fulfilling food for me. I can survive a full day on one egg, sunny side up…liberally spiced with red chili flakes and the yolk runny…totally acquiesce with Anthony Bourdain about being an egg slut…total lover of eggs…
They are god’s gift to cakes and anything baked…but still people resist. They don’t know what they are missing. Can’t help everyone, can you??

Easy…so easy it’s not funny. The recipe is a simple, sinful basic brownie recipe…which I have been experimenting upon…I’ll let you in on a secret…the reason why I use oil is generally because sweet child and hubby dear go through butter with such alacrity….every time I look into the butter dish its…full of bread crumbs or little green specs of Sarson Ka Saag.

for the
Eggless Chocolate Brownies with OATS!
you need
1 ½ cups/240 Gms Plain flour
¾ cup Quick cooking Oats finely ground to a powder
2 tbsp unsweetened cocoa powder
4 tbsp granular sugar (if you are intending to serve the brownie with chocolate sauce or an icecream, this much will suffice…for a plain brownie you may need a bit more-realised after the cake came out from the oven)
1 tsp baking powder
150 Gms cooking chocolate
5 tbsp vegetable oil
2 cups milk
1 tsp vinegar
2-3 tbsp chopped walnuts
This is what I call a simple cake, wet into dry…
Step one, chop the chocolate and put it into a double boiler ….here alcohol would be a good idea…but friend Ritu Sharma is also a pundit…no eggs, no meat ,no alcohol….Me, I believe…you need the rose tint in life once in a while.
Sift the flour, cocoa, baking powder into a big bowl….
Mix in the powdered oats.
So here we added …you go it…MILK!
Let it melt .
To the melted chocolate add 1 cup milk and the oil.
Make a well and pour in the wet…chocolate and milk and oil mix.
We’ll add the vinegar to the second cup of milk. Vinegar…hmm that’s chemistry…makes milk into buttermilk which makes the cake softer!
To make it wett”er”…chocolate can do that yeah!
Add the now curdled milk…only as much as needed.
Oops, we forgot the oven pre heated at 180C/450F and the greased and floured cake tin. Back to the basics…shunned the silicone…its best left to implants. That is the batter.
Now pour the batter into the tin…if you want to use lots of nuts…fold in the nuts at the last moment….or if you do indeed forget ,just sprinkle them on top.
Right….35 minutes….
Heard on master chef (Ritu did)…that the best indication that your cake is good comes from the bottom…nice texture of the bottom means your cake is good. Why does everything have to be about bottoms? Because, you sit on them silly!

Turn it around…warm…inviting…
Serve it with a dollop of vanilla ice-cream…lets make that at home soon. Boxed vanilla ice-cream is no fun.
I Remember a time, not so long ago when I used to make ice-cream at home….without the GMS!
