Ribbon Sandwiches...Happy Birthday Upamanyu

Right! That play Station Cake was wow! 
Generally hubby dear is very unaffected by any thing sweet and his appreciation of my frosting or baking,but when he saw the cake...it was like that "Things that make you go hmm!",that aha moment...being dumbfounded...but just a small wow!
Knowing my man..that "wow" spelt a gazillion words of appreciation.


Party food for children...not difficult is it? Lots of white flour, lots of processed cheese, and lots of oil to deep fat fry food and lots of KETCHUP!
I had always been indifferent to ketchup, our love story only changed with the bun in the oven. All the time I was carrying sweet child, all protected under my magnanimous heart, I used to get the strangest cravings …for ketchup! I used to go through a bottle of ketchup in a couple of days…when all the while hubby dear was trying to force glasses of orange juice down my throat. Much to his horror I poured ketchup over all that was edible…little did I know that I was directing sweet child’s food preferences for life.




Totally loved the part when Bella Swan…Cullen was drinking human blood (mums are dictated by their children’s choices….at least the while that we are carrying them!)I must have had many, many liters of ketchup! Only sweet child is not as pretty as Renesmee!
Well, the way the tide is flowing today…pretty boys are not a pretty thing-as long as he has a following of pretty women, I’ll have no worries.

I searched and searched for the vid. of bella drinking blood...but nada!Sweet sister found that bit disgusting...well her babe is thankfully not (yet) addicted to ketchup!

Back to the party food, along with the noodles and the Manchurian, and the Samosas and the Pizzas and the Veggie Burgers, I plated sandwiches….slathered with butter and you guessed it KETCHUP!
They are called tricolored sandwiches, but then we had to have them “hatke”…
Ergo, we made ribbon sandwiches.

For the

Ribbon Sandwiches-Happy Birthday Upamanyu

You need

2 loaves of bread-400 Gms (sliced the wrong way)
½ cup green chutney…even a pesto will do
½ cup ketchup
100 Gms butter
100 Gms cheese spread
Salt and seasoning to taste


Friendly Neighborhood baker to the rescue again-If you get Spidey like images, I’ll drop down dead! The baker is old, skinny and ugly –thank you! But as a belief that I must be stark, raving mad he slices the bread the wrong way for me…same way as the Masala pops.

For the green color I used regular mint coriander (dhania-pudina) chutney. ET voila...


Blend the cheese spread and the chutney, if you don’t have the much loved tub of amul cheese spread, use butter...cream cheese just does not have the bit of the cheese spread.



Whip up the butter well and then add the ketchup and blend it all in!
You will need to taste it; generally it doesn’t need anything else, but just a whiz of seasoning does the magic.





The first thing...removes the crusts from the bread.

Spread the chutney spread on alternate slices…



And the ketchup butter ...

Stacked  Neatly!

And wrap the loaves in film and chill.

Slice with a sharp knife...sandwiches...last?

That was one little boy..brother of sweet child's friend...Intimidated by the racket!

That was the remaining food...


And the cake...which I so did'nt want to slice...


Next day….slice it open and yay…pretty ribbons…not the easiest things to eat but they are yum! They have to be when you slather white bread with butter and ketchup…what choice does the poor bread have but to be sooooo tasty!


You can make your own bread and then make these ribbon sandwiches…or roll them like the Masala pops without baking them…

Play Station 2 CAKE- Happy Birthday Upamanyu

Sweet Child O'mine turns 12 today...I did what I could only do for love....


Take 2 days to make a cake...


How different is it from the real thing?


This was day 2...frosting....

all for this moment...

leftovers...

never heard so many thank yous in 12 years...


All I know is that...


Its been ...

12 years of love,

12 years of adoration,

12 years of thanking god,

12 years of amazement,

12 years of wonder,

12 years of awe,

12 years of craziness,

12 years of sanity,

12 years of  devotion,
,
12 years of  wanting to run away,

12 years of of madness,

12 years of contentment,

12 years of wanting to pull my hair out,

12 years of that warmth in my heart,


12 years of screaming my lungs out,

12 years of being blessed...

and many many more adjectives that I can not think of...

thank you god for our beautiful child....

happy birthday UPAMANYU....

may you have many many 12 years of all the successes and blessings in the world.




So that is why I've been busy...will be a bit more regular ...asap!

Eggless Chocolate Brownies with OATS....

Hey! I so love you that I’ll bend over backwards to provide recipes for all those ova avoiding ,chocolate loving people who inhabit Blogosphere!

From all of my travels into cyberspace and the food world, I have come to realize what an important part eggs play in the human diet. I’ll have you know that eggs are the most fulfilling food for me. I can survive a full day on one egg, sunny side up…liberally spiced with red chili flakes and the yolk runny…totally acquiesce with Anthony Bourdain about being an egg slut…total lover of eggs…

They are god’s gift to cakes and anything baked…but still people resist. They don’t know what they are missing. Can’t help everyone, can you??

Well here...it was nicely packed…as a little token that will warm your heart.



That was Swati…the guinea pig for the day!
Happy with the low fat, high fiber, eggless chocolate brownie.

 Health ko pakadna MUMKIN HAI!....not like Don!


Easy…so easy it’s not funny. The recipe is a simple, sinful basic brownie recipe…which I have been experimenting upon…I’ll let you in on a secret…the reason why I use oil is generally because sweet child and hubby dear go through butter with such alacrity….every time I look into the butter dish its…full of bread crumbs or little green specs of Sarson Ka Saag.
Hence, oil…
for the 

Eggless Chocolate Brownies with OATS!

you need 

1 ½ cups/240 Gms Plain flour
¾ cup Quick cooking Oats finely ground to a powder
2 tbsp unsweetened cocoa powder
4 tbsp granular sugar (if you are intending to serve the brownie with chocolate sauce or an icecream, this much will suffice…for a plain brownie you may need a bit more-realised after the cake came out from the oven)
1 tsp baking powder
150 Gms cooking chocolate
5 tbsp vegetable oil
2 cups milk
1 tsp vinegar
2-3 tbsp chopped walnuts

This is what I call a simple cake, wet into dry…



Step one, chop the chocolate and put it into a double boiler ….here alcohol would be a good idea…but friend Ritu Sharma is also  a pundit…no eggs, no meat ,no alcohol….Me, I believe…you need the rose tint in life once in a while.


Sift the flour, cocoa, baking powder into a big bowl….


Mix in the powdered oats.


So here we added …you go it…MILK!

Let it melt .

To the melted chocolate add 1 cup milk and the oil.


Make a well and pour in the wet…chocolate and milk and oil mix.
We’ll add the vinegar to the second cup of milk. Vinegar…hmm that’s chemistry…makes milk into buttermilk which makes the cake softer!

To make it wett”er”…chocolate can do that yeah!
Add the now curdled milk…only as much as needed.



Oops, we forgot the oven pre heated at 180C/450F and the greased and floured cake tin. Back to the basics…shunned the silicone…its best left to implants. That is the batter.


Now pour the batter into the tin…if you want to use lots of nuts…fold in the nuts at the last moment….or if you do indeed forget ,just sprinkle them on top.


Right….35 minutes….


Heard on master chef (Ritu did)…that the best indication that your cake is good comes from the bottom…nice texture of the bottom means your cake is good. Why does everything have to be about bottoms? Because, you sit on them silly!
Ask J LO!


Turn it around…warm…inviting…
Serve it with a dollop of vanilla ice-cream…lets make that at home soon. Boxed vanilla ice-cream is no fun.
I Remember a time, not so long ago when I used to make ice-cream at home….without the GMS!

Rangolis..

hello...
no ,not a food post..but then I just had to share this pretty rangoli रंगोली ...matters of the heart,pretty complicated!

This,the सेंटर piece  was totally hand made...with flowers if you may...
This was the peacock that flanked one side...

That's the second peacock....these were made with crushed stone....and the rangoli  jaalis जाली ...those of you from down south may not be awed ,but my mouth was shut for once!


this is the view...tried to encompass it all...I only have a 2 MP camera! My next phone will be one with a 12 MP camera....if I can wheedle hubby dear into paying the bill!☺

Will just post the egg less brownies in a bit...
till then enjoy this eye candy(I must be getting demented...where's the handsome hunk?I'm calling some colours thrown on the floor eye candy!)

Whole Wheat Brownies...

Quite oxymoronic” isn’t it? Healthy and brownies just don’t go together…the loads of butter and the loads of chocolate and of course the sinfully un healthy plain flour….Ok the flour only constitutes a wee bit of the un healthy stuff.
Absolutely bad, the white stuff is-no fibre, no vitamins Nothing!



As if you are going to get your RDI from 1 %^#^%# piece of a chocolate brownie.Yup, you better believe it... I love the occasional swearing…you’d have to be totally “nun” like if you don’t swear. In fact friend Bhavna Panwar has a son, who so loved to swear at all and sundry…even the passing helicopter, or the pet turtle or the household help.

I don’t approve of the methods she and her husband employed (no, they are not the cane or whip wielding types) to rid him of this habit, I must say I was most disappointed when I heard that he dropped a little color from his language. Sweet child o’mine does not approve of the swearing bit; he prefers to use his fists. Quite the angry young man he is.





Well back to the story of the Whole-wheat Healthy Brownies. It so happened that it was a dark and stormy night-with the storms rising in our tummies…when we decided to act as renegades…to our new year resolutions (This was the 30th of December BTW). our resolutions to not eat anything sweet after dinner was doomed even before they had had a chance to breathe. But that’s life. Cruel!
Obsessing about his Galaxy Pegasus Beyblade (the return of the prodigal…Beyblades have come and gone…this is the third revival) sweet child was in need of some sustenance….and it had to be SWEET!
He was the one who went searching for a new HATKE recipe for chocolate cake….so the healthy bit.


Possibly the simplest thing we made in a long time and a chance to use a new mould. This time a heart shaped silicone mould for a small cake –bought by friend Ritu Sharma from her quick trip to Mumbai.

For the

Whole-wheat Healthy Brownies...

You need

¾ cups Whole-wheat flour
2 eggs
¾ cup sugar
100 Gms butter (for those who want to use oil or get butter in differ rent sizes than us...100 Gms butter equals ½ cup)
100 Gms cooking chocolate
¾ cup whole wheat flour or Atta
1 tsp baking powder
½ cup chopped walnuts (optional)
2 tbsp rum (brandy or milk or water, whatever you wish to be drinking at the mo!)
The butter is a wee bit extra, so butter and flour your moulds with the butter from the ingredients.
Before you start, pre heat your oven to 180C/350F.


Start with the eggs and the sugar...



Since it was the mess maker who had demanded (no such thing as request exists in his minds…yes…I know I brought him up all wrong!) the brownies, he had to be the one not photographing. Needless to say that after his exploits in the kitchen, the walls need to be cleaned of all the splattered egg bits. Had we been in Ethiopia, we could have had cakes off the wall, quite like dung cakes...perish the thought.Would’NT trade Ranchi for Ethiopia.
Right, into the egg and sugar, we added the butter, melted….all this while I was being briefed why the Galaxy Pegasus was better than all the other Beyblades combined, as if he is going to write his dissertation on them…the only thing that comes to mind…darling I don’t know why I go to extremes…




Sift the whole wheat flour or Atta with the baking powder.
In a bowl place the cooking chocolate over a pan or simmering water and add the rum or brandy or whatever into it, stir to help it melt…the elixir of life (alcohol) always needs a helping hand!


When the chocolate is melted.... 


Right, he whips up a mean batter, no?




When the chocolate is melted and the eggs are beaten, add in the chocolate-making sure you scrape the bowl…here sweet child never lets me bother. Sometimes I wonder what Romeo the dog must be fantasizing about…helping us clean the dishes?



Now dump the beater, fold in the flour, this is the time to add the nuts, if you are using them...



Thats the batter...deceptive,,,you would never guess the amount of chocolate in it...If you want to use a n aluminium pan an 8" by 8" is appropriate.


Since the mould was small, I added 5 mini cup cakes too…I first thought microwave...but went with convection...the glass was occupying maybe status.

Done, now pour the batter in and level it…we don’t want the Alps in the pan.



Into the oven, 30 -35 minutes…something interesting happened GOSSIP of the family drama kind and I completely forgot the cup cakes…so they were eaten as cookie discs…see we don’t waste anything.But they were not photographable...so we skipped the cake discs,,,



To unmold the cake we had to wait an hour…silicone!

Practice for sweet child’s birthday cake….UPAMANYU…in ye olde royal icing.

Told you Ritu Sharma were better…


Anyway, those brownies didn’t last to tell many tales…

The making and baking was fun…then they say you don’t spend enough time with your kids!
