All Green!
This beautiful bouquet of flowers inspired me to go green.
No, its not about St Patrick's day...I'm not Irish...though my freckles will rival anyone with Irish blood.
Me,and all my school mates were coached well by Irish nuns ....so we knew about shamrocks and leprechauns and St Pats...much before the Internet invaded our bedrooms.
Green and its significance was much talked about by the sweet old ladies...
And before you ask...I am a product of Loreto!
This bouquet came calling with friends Reetika and Shankar Parashar...when they came to help us celebrate our 15th wedding anniversary.
Sitting on the table, it was crying for attention...screaming ,actually!
So, something green had to be done!
Google gods to the rescue...Green cakes were just Green Velvet Cup Cakes!
A whole hoard of them...and the most trusted way to go...only bakerella !She also adapted the recipe from the red velvet cakes...
Instead of butter ,this time we use oil.
And instead of butter cream, this time its cooked butter cream.
Half the calories!
Wow!
Without much ado..lets get on to it. I used half the recipe for 12 cuppies.Actually 13 cupcakes ,my bakers dozen!
for the
Green Velvet Cupcakes with Low Calorie Cooked Butter Cream Frosting...
you need
2 1/2 cups flour
2 cups sugar
1 tbsp cocoa powder
1 tsp bicarbonate of soda/soda bi carb
2 eggs
1 1/2 cup oil
1 cup buttermilk
1 tbsp vinegar
1 tsp vanilla essence
2 oz green food colour
Before you start ,set the oven for 350F/190C.
Grease and flour your muffin tin...a better bet will be the cupcake liners...
Sift all the dry stuff together.
Now the oil and the sugar...
Into this the eggs...And the buttermilk and vinegar. If you do not have buttermilk add 1 tsp vinegar to 1 cup milk to make buttermilk and proceed as usual. The recipe I used for my red velvet cupcakes asked to use the vinegar and baking soda in the end...but this one worked fine too...
Now add in the dry stuff and beat on medium for 1 minute...
Last bit with a spoon...old habits die hard...
And the food colour in the end....
The final green.
Poured into the muffin tin...and ready to bake.
After 17 minutes, the toothpick came clean...
These were done...
And cooled and frosted...the frosting coming up in the next post!Its at the click of this!
