As if life is so easy....
Some one try explaining this to sweet child, the meat and sweet eater....for him any thing green equals NON APPETISING, and I'm sure many many mothers face the same problem.
I've devised a solution...its always better to go all out...when its green that has to fed. it must be so green that even poop is green! GIGO works here, only its not garbage,its green in and green out.And resort to all methods of coercion....with love and black mail and white mail.
Accompanied by Ketchup!
At least that is not green!
And we prettify the platters....with a little design. Since these Hariyali Kebabs were made during the exams...they were king size and were followed by...you guessed it- a definitely unhealthy cheese laden burger....But at least something worked(yes these were made again ,in a smaller size).
I was about to make potato patties stuffed with green peas, but the spinach in my backyard was threatening to walk to the neighbours...so I was informed by the maali-gardener... मैडम खा लो ,ना waste करो! (don't waste the spinach...as if hubby dear and the parents were not enough t o inform us about the goodness of green!)
for the
you need
1 cup shelled peas
250 gms baby spinach
3-4 boiled potatoes
1 tsp jeera/cumin seeds
3-4 tbsp oil/butter/clarified butter/ghee for pan frying
1 tsp finely chopped ginger
2 garlic scape's finely chopped-you can use 2 cloves of garlic or just skip
1/2 cup fresh breadcrumbs
salt,red chili to taste
Chaat Masala to sprinkle
a handful chopped cashew nuts -optional
You can simply boil the peas, but as I had other plan, I had already tempered and pressure cooked mine. About 1/2 tsp of oil in the cooker, and a tempering of Jeera/cumin seeds,red cilli flakes and salt. A few teaspoons of water and they are done in a couple of whistles.
The baby spinach,washed, cut and blanched. Squeezed as though our lives depended on it....
The peas drained of all the excess liquid. If you don't have a pressure cooker, this can also be done in a sauce pan. Heat a wee bit of oil, add the jeer/cumin seeds when it smokes, the peas and the salt and red chillies. add a little water, cover and cook till done. You can also make a meal of this, just squeeze a little lemon juice over the peas and enjoy with a slice of buttered toast.
Buzz all the greens with the potatoes in a food processor or just mash them up together. Th this add the bread crumbs, condiments...
Now season with the salt and the red chillies. Make the patty dough....At this stage you can also add the chopped cashewnuts.
I made many shapes. This was the basic, just roll the patty in a little bread crumbs. The bread crumbs give a lovely golden colour...
Pan on heat, oil on...and patties...frying away to glory.
Turned it over...
And served in style. A little bit of cheese would have gone a long way in the centre....but we are counting calories.These were sprinkled with a bit of chaat masala for a teeny bit of kick,but they disappearde...we made a meal of just the kebabs. Happy in the knowledge that these were healthy ,green and low cal.
Pretty???These are the fruits of our maali/gardeners labour....in full glory!

Some one once told me, "When one can lie down why should I sit?" Get the drift??? these patties could have been baked, but why complicate matters?
So we bake again another day.
