All for the love of sweet Sanskriti.
I'm reliving my early days of motherhood with sweet sisters baby Sanskriti. Sweet child is now 12, and has his own opinions and thoughts about all and sundry. I've always rued the fact that god never blessed me with two, a boy and a girl. Now at least , I can get my vicarious thrills of mothering another baby , so what if she wont stay with me forever, I'll still get to meet her so very often, and still get to shower all my love on her.
Ever since Sanskriti started teething , sweet sister has been complaining about, is how little Sanskriti eats and how much she fusses.
If I hadn't seen it, maybe I'd have always thought she exaggerated.
Meal times are torture. I mean, some girls are fussy eaters all right, but this babe is just too fussy.
one thing she is super fond of is SUGAR, and was getting it from Parle-g or other sweet cookies.
this was one bit we were sorely tempted to change.
With a new oven Crying for use( I just upgraded to a 40 L Morphy Richards Convection Oven BTW), I had no excuses.
We decided to make a healthy version of the Nankhatais that our mother used to make for us, when we were kids.So it was Atta all the way.
In between the Seekh Kebabs and Roomali Rotis that we had for dinner(all home made and awaiting blog posts)we found time to make one batch of these cookies .
Tried them out instantly on the baby and would you believe it, she screamed her lungs out for More.
It was D.I.F.F.I.C.U.L.T. to get her to stop after two.
Try out these, if you have a fussy baby, or just whatever the reason....you wont regret these baby bites.
For the
Whole Wheat(Atta) Cookies with Ragi -Baby Bites...
you need
1/2 cup wholewheat flour(remove 2 tbsp of the flour and replace in tin)
2 tbsp Ragi flour
1 pinch bicarbonate of soda
1/4 cup ghee or clarified butter
1/4 cup icing sugar
2 green Cardamom
You want a total of 1/2 cup of flour. Do replace the wholewheat flour or atta into the tin.
Pre heat your oven to 170C/340F.
Place the ghee and the sugar in a bowl. If you don't have ghee use 1/4 cup and 1/8 cup butter, or the same amount of shortening.
Pound the cardamom pods and put the powder into the bowl.
Cream the ghee and the sugar.
Add to the creamed mix, the flours and the pinch of soda bi carb.
Place the soft dough in film and refrigerate for 5 minutes while you make the second batch.
And the dough....
for the
Whole Wheat(Atta) Cookies with Semolina -Baby Bites...
you need
1/2 cup wholewheat flour(remove 2 tbsp of the flour and replace in tin)
2 tbsp Semolina
1 pinch bicarbonate of soda
1/4 cup ghee or clarified butter
1/4 cup icing sugar
2 green Cardamom
Same process as above. Now chill this dough while you start the first batch.My oven is BIG . So two batches of these cookies fit into one tray lines with Al Foil .
Little marble sized balls, slightly flattened to about 1/4 th of an inch.Now scored with a fork.
And into the oven for 15 minutes.
AAHHHHHHHH!!!!!!! the aromas were drove sweet dog romeo insane. And little Sanskriti was not far behind.
So difficult it is to keep the two of them apart, almost like we are torturing young love!!!
Out, the cookies were a little soft, but they crisped up beautifully!
And with all of Masi's love packed into the cookies...how could they not be AWESOME!
I wish I could invite you in to hear and see the baby's reaction to the cookies!!
