Wheeeeeeee...Pinwheel cookies...

Posted on 04:24 by Unknown
After the link I shared with y'all about why not to buy cookies from the market...this indulgence was justified.....These adorable pinwheel cookies are sweet of course..chocolaty..what else??and have a heavenly aroma of peanuts and vanilla...so no ways you can go wrong with these.....
an old recipe of spiral cookies from Femina..which did its teeny bit in making me a Woman of Substance....specially if you count the number of adipose cells...too...ancient recipe that was  begging to be made over...which I did for you all....

like so...

Red always brings out the best in me....

For these
Pinwheel Peanut Cookies.......
you need...
VOILA!!!
two doughs.....

one vanilla and the other chocolate...to proceed with the doughs...you need

This was all the butter I used...100 gms for almost 28 cookies..

Start with A handful of Crushed roasted peanuts

Vanilla
50 gms butter at room temperature
1.5 cups flour
half a beaten egg
a few drops vanilla essence
a pinch of salt...only if you use unsalted butter...

No blender please ..we are in the mood for some exercise...whatever little the butter we want to use all...not sacrifice it to the beater blades....

Cream the butter and whip in the sugar...take pity on your self and use caster sugar...and to this add half the beaten egg...I had already divided  the egg into two bowls...

Add the essence and the flour to get a dough like this...you'll need to get down and dirty and use your hands.
set this aside and get ready to do the Chocolate dough..
Now take...whatever is left of the egg
1 and 1/4 cups flour
1/4 cups cocoa
50 gms butter
1/2 cups sugar
same drill...but before you start in the least possible amount of water mix the cocoa
Now do the same thing to the butter and sugar as in the vanilla dough and add the flour.Use only as much egg as needed.
To get a similar dough.
Lay the vanilla part between two sheets of cling  film..

Saves a ton of cleaning up later...and roll into a rectangular shape about a cm thin
Do the same to the chocolate part and place it on the vanilla dough...be sure to lift the cling film you don't want a plastic cookie ...
I lost patience and the white bits are showing...well you need to learn from my mistakes no??
roll along the longer side and make a log
Wrap it well and chill.Mine slept overnight. In the fridge!
Now get your oven up to 180C and get to work...
lay the crushed peanuts on the work surface and roll the log to embed as much of the peanuts as you can..
and now slice carefully half an inch thick...
I stuck  a pick into each one....cute....that's why pinwheels.....
Lay them out neatly on the baking tray and bake for 12-15 minutes at 180C
and then present them as your flights of fancy.....
Pretty huh....
we have Mahika Bhartari to  thank for the ribbons and hats...

The cookies are chewy only because they are 5 gms less butter per cookie...personally I think that's a good deal...
so decorate them with ribbons or whatever you desire and enjoy.......

Ravneet Rekhi these were for you...thanks for the help and I hope you and your family enjoyed these cookies.......
So what are you baking today????
