Saffron Focaccia....

Oh my go(l)d....dazzled by the beautiful golden yellow colour......
and bowled over by the taste....you will be at least...it is a flat oven-baked Italian bread..yummy....and light and of course GUILT FREE!!!
I'm on a major guilt free trip right now....
Oh lord....keep me from temptation
and forgive my sins...
at least forgive my sin of over indulging myself in all that is sweet....

I promise to stick to low fat and salty treats...at least for the time being....
My family has quite a desi palette...even after a full continental meal...they still want a little bite of north Indian mirchi,tadka  in their meals........
We are so used to the tadka phenomenon that now even our fruit juices are not spared...
RELAX...the tadka is NOT of mustard oil and garlic....

The cahllenge is to devise ways and means to introduce other cuisines into our menu...even if it means making aloo paranthas afterwards.....

So focaccia!and how better to Indianise it than adding saffron...net result...

Saffron Focaccia....

for which you need....
a pinch of saffron strands(what else...)
120 mils boiling water
225 gms plain flour
1/2 tsp salt
1 tsp dried yeast
1 tbsp olive oil
and to top it all...
3-4 cloves of garlic
1 onion
rosemary...fresh if you are lucky...lesser mortals like us have to use the bottled versions.

we live in eternal hope...
I broke off some sprigs of my tulsi from my aangan....
1 tsp olive oil...

You first need to place the saffron in a glass and add the boiling water..and let it steep a minute while you gather your things and breath from all this exertion...

the beauty of yellow light my friends lends a"saffrony"glow to all things....
In your food processor or bowl place the flour salt and yeast,pulse while adding the saffron infused water.....and knead...
also add the olive oil...

and then bring it out on a plate..
Knead it a while with your hands and cover for a while and rest your pretty hands....
till the dough Doubles
Now grease a sheet and pat out the dough till it is a cm thick...show it your love and slather it with half the oil and keep it covered for half an hour
after a half an hour pre heat your oven to 200C ...you can also use an electric tandoor...works well with that to ...but don't leave it unattended!
smear the surface with the toppings the sliced onion,sliced garlic and the rosemary-and the rest of the oil...
Insert the sprigs of tulsi or basil...if you have olives....slice and add those too....
And when the oven beckons offer your focaccia to it...it needs only 12 -13 Min's remember to check for the hollow  sound when you tap its backside...
and as expected  the great gods of fire have blessed your bread!
Amen.

and disappeared........
see the specks of saffron!!!
Enjoy with a great tomato soup or pasta or salad...or on its own...give your bread the attention it deserves!
and will it not become fat and sit on your bum???god only knows!!
