Indian General Elections 2014 with Social Mobile Apps

Posted on 04:37 by Unknown
General Elections 2014.
Looming over the horizon is one of the most important responsibilities of every citizen holding a voter ID card.
We , the citizens of today are the lucky ones.
We are witnesses to a change.
We are witnessing India and Indians change.
Till a few years ago we never really had a choice.  Voting meant choosing between the devil and the deep blue sea . Either way was a recipe for a disaster.  The country and the people were treated as someone's personal fiefdom  and many a fortunes made.
I say this with great disdain and authority. I am reading about all the mismanagement and thievery that has been done in the name of the progress of the nation since independence.  I  am reading and researching as I must be responsible enough to pass on correct information to the 105 children I teach.
The election results for the Delhi assembly 2013 vindicated my desires. I live in Jalandhar and so was unable to cast my vote ,but rejoiced when The AAP or the Aam Aadmi Party got way ahead of the Congress.
Arvind Kejriwal is the Chief Minister of Delhi today, he has a mammoth task ahead of him. For once , his methodology will be tested. Many are hoping for his fall while those who have suffered and wish for the development of the nation are praying for his success.
I am one of them.
What the AAP has achieved in a short one year time period has been like a tsunami...sweeping aside the corrupt and the corrupted.
AAP held rallies and jan sabhas to gauge the mood of the Indian public and act accordingly. Besides the loss of time imagine the administrative headache it must have been for the traffic cops and the police.  Many would have had to miss a days work...or more.
That is where social media and networking and smart phones and technology comes in.
Indians are smart.  We use computers and the Internet to buy and sell vegetables at the vegetable and fruit mandi. The gram panchayats  are using them too.
All and sundry are using mobile phones ,irrespective of their social or economic status.
This is the best time to initiate a revolutionary process in choosing our next government.
By using social media Apps like WeChat and the likes.
An effective leader can send his inspiring words in the form of messages to people. Even the illiterate or the working majority can be reached. Imagine how easily the politicians can stop bribing people to attend their political rallies. There would be no bandhs or overloaded tractor trolleys and trains during the month preceding the general elections 2014.
WeChat is an excellent idea ...
A harbinger of the times to come. People would be free to choose and make intelligent decisions.
A new India.
A better India.
Technology will lead.
I am lucky to be able to play a dual role. As a teacher of social sciences ,I can motivate the 14, 15 year old teenagers I teach to be a part of informed discussions and also convince their families to exercise their franchise, and bring about a change.
As a blogger, I know I am a food blogger but I believe it's time to stop cussing and criticising and act.
I'm going to be blogging about this and reaching out to my readers.  After all, one gets the government one deserves.
We may not have given this much thought earlier ,but it's better late than never.
So the time has come to use a change to bring about a change.
Even if we just have to use social mobile apps.

Gifts to my Child-A Mother Speaks...Blogadda and HDFC-1001 Gifts

Posted on 07:02 by Unknown
Its that time of the year again...
The time where one must begin to count ones blessings.
For me,this time is special...
Its time to plan Sweet Child's birthday that comes up just as the new year begins. Its time to remember the birth pains and the moment of joy as I first held him in my arms. That tiny bundle of joy is going to turn 14 soon .Certainly not tiny anymore , that bundle is quite painful very often. But all that pain notwithstanding, the love just deepens.
And the desire to do ever more for him and shower all my blessings on him is overwhelming some of the time.
I'd love to shower more than my blessings on him...
Hubby dear and I have done all the necessary planning and the child insurance stuff ,but then there is always a thought, have we catered for enough?
There is so much more I can give to him...

1. A secure home,Confidence, self esteem and the guts to stand up and ask.
I wish to gift to my child the belief of coming from a secure and a happy home. His trust in us,his parent's love for each other and him will make him a wholly confident and complete person. Only then will his self esteem be high. Only then will he have faith in himself and in his fellow beings. That confidence and faith in himself will ensure that he never has to bear any injustice or witness any injustice done to a weaker being in front of him.I want him to be strong and honest and fearless.

2. An Education and a thirst for knowledge.
I wish to gift Sweet Child the access to quality education. an education he can bank upon. an education that will help him grow in life. An education that will help him advance in his career, or to step away from the beaten path and maybe enter a profession different from the run of the mill. I wish to gift him a thirst for knowledge that is insatiable. His need to know more should not stop when the chapter ends. I wish to gift him that little niggling desire to know just a little bit more, and like a number line,I wish that it never has a last point.

3. A world that is free of disease and poverty and war and faith in the Almighty .
I wish I was Bruce Almighty for a day...
I'd remove all traces of disease and poverty from the earth. Just so that my child could believe that God is actually like a parent, looking out for all, ensuring that all the children of God have enough on their plate and enough faith. And then this would ensure that Sweet Child's faith in the Almighty never falters. You know, faith can move mountains.

4. A gift of the ability of discerning how to use his TIME well.
A commodity more precious than money. A commodity that rules they way yo must lead you must lead your life. A commodity responsible for your well being and stress free life. I wish him the time to prioritise his life and live it accordingly. I wish that he is able to define what is most important to him and live accordingly. I wish that he does not make his studies and then his career and his drive to be successful the most important thing in his life. I wish his dedication allows him to be true to his goals and focus and also take the time to smell the roses. I wish he follows Aamir Khan's pearls of wisdom from the "3 Idiots" - "Success ke piche mat bhago...Excellence ko haasil karo...Success jhak maar ke tumhare piche aayegi".I wish he works for that excellence...Success will follow in his footsteps.

5. I wish him Satisfaction and Peace and Happiness and the will to Share.
There is no end to desires. No end to wanting and no end to wishing. I wish that he always has that hunger to attain more but is able to restrain himself and know when to stop. Over indulgence will only cause health problems...
I wish him peace and happiness and the ability to share with his fellow beings... because problems are reduced and happiness multiplied when shared. I wish him the ability to share his blessings...

And maybe some day look back on these indelible marks that I leave behind for him on the Internet and smile, maybe wish the same for his children to come...

This one little bit that I keep on my smart phone is a snippet I took from pinterest. A little regret that I never spent all my happiness with my child...
I keep this as my new year resolution this year and know that I will at least go 20% of the way that this little poem says and make happier memories with Sweet Child for us to bank upon tomorrow .
After all warm hearts are made of things like this.

A poem from a mother to her son.
If I had my child to raise all over again
I'd build self esteem first and the house later.
I'd finger paint more and point the finger less.
I'd do less correcting and more connecting.
I'd take my eyes off my watch and watch with my eyes.
I'd care to know less and know to care more.
I'd take more hikes and fly more kites.
I'd run through more fields and gaze at more stars.
I'd see the oak tree in the acorn more often.
I'd be firm less often and affirm much more.
I'd model less about the love of power,
and more about the power of love.
Chief Dan George

Thank you blogadda for this little opportunity to count my blessings and wish for some happiness.

Whole Wheat and Jaggery in my Gingerbread Man (without Molasses)

Posted on 04:27 by Unknown
The Gingerbread Man is ubiquitous...Every blogger is overdoing the Christmas fever and the Christmas cookies.
And sweet child has been pestering me to let go of the red pen and the answer sheets and bake...
The whole wheat is just to add some extra goodness into my gingerbread cookies.  No molasses available off the shelf in Jalandhar so honey was the only recourse . And brown sugar is at least 5 km away from my house...
Jaggery or Gur (we used Gur ki shakkar or powdered Gur to make mixing easier) is healthier than plain white sugar ,mind you.
Home made White butter and refined vegetable oil took the bite out of the butter.
The first batch of cookies were studded with heart shaped sprinkles before baking , but that was a bad idea as the sprinkles melted into nothingness.
The next batch was plain, with more ginger powder and royal icing frosting and pretty sprinkles.
Other than the extra sugar high, the cookies were awesome with green tea.(I have to be prudent -cookies and coffee would ruin my diet plans...so a sugar free watery green tea is a perfect accompaniment to my gingerbread men).
Restraints are difficult.
Ask me...that's how the cookie crumbles and that's what sweet dog prays for.
Try these. ..
The cookie cutters are available easily, the dough is easy to make and roll and the cookies take only 12 minutes per batch.
Well worth the un-effort.

For the

Whole Wheat and Jaggery in my Gingerbread Man (without Molasses)...

You need

2 cups plain all purpose flour
1 cup whole wheat flour
1 cup packed brown sugar or Gur ki shakkar
1 1/2 cups  butter -I used 1 1/4cup butter and the rest refined vegetable oil
1 egg
1 tsp bicarbonate of soda or baking soda
4 tsp ginger powder
1 tsp cinnamon powder
1 tsp nutmeg and clove powder -I used all spice powder
1/4 cup honey
1 tsp vanilla essence

In a bowl mix well all the powders. Whisk or use a blender not a sieve.  There are people who have dissertations on why dry ingredients must be mixed and not sifted.
In another bowl blend the butter ,oil and sugar or Gur ki shakkar well.
Add in the egg ,honey  and the vanilla essence and blend well.
Whisk in the dry ingredients till your blender blades don't move no more, then remove all the dough from the blades and knead in the rest of the dry stuff.
Place in the form of a brick on al foil or film ,shape and pop in the fridge to harden.
The dough is soft so don't worry on that account.  All exercise in rolling dough must be done else where.
You'll need to roll out pieces of the dough between sheets of parchment paper or cling film to 1/3 an inch this. I like the cookies a little thick not like crackers.
Remove the top layer of film and cut out with flour dipped cutters placing the cookies on the baking sheet.
Re roll scraps of dough as you  haven't altered the dough by using flour to roll the cookies. ..
Brilliant.
Oven on at 170C /325 F
Trays in one at a time for 12 13 minutes. ..the cookie will be done and browning from the base but soft from the top...
Take them out...
5 minutes later with the help of a spatula or knife, place them on a wire mesh to cool.
In the meanwhile your second tray will be done...
Roll baby roll and do more cookies. ..
30 large cookies ir 45 small ones like mine. ..

Frosting is the blog post for tomorrow. ..

So what are you baking today???

Christmas come early -Caramel Fruit Cake with Red Red Wine

Posted on 00:09 by Unknown
Christmas has certainly come early here. What with the unhappy ,foliage full diet that I am on, I was just craving for some soul satisfying, alcohol drenched, sweet stuff. I have had enough of beetroot and lettuce and apples for now...
Real calorie dense and sweet Christmasey kind of cake.

One unfinished bottle of red wine and a bowl full of cashew nuts and raisins was all it took . We did munch through a lot of the macerated raisins so had to substitute that with tutti fruity. ..candied pumpkin. They dissolved beautifully into the cake and sacrificed their identity to glorious taste . The wine was every where and the flavour grew more intense the next day. To save myself the pain and torture of abstaining from the absolute pleasure of munching through the cake, I gave it away with a heavy heart.

The cake was soft in the centre with an awesome crust and a dreamy caramelised wine flavoured raisin bottom. Easy to make and easier to eat. .

For the

Caramel Fruit Cake with Red, Red Wine-and Whole wheat flour...

you need

2 cups plain all purpose flour
1 cup whole wheat flour
1 3/4 cups sugar
3/4cup sugar for the caramel
1 cup raisins and cashew nuts or tutti fruity
1 tbs shredded candied orange peel
3 tsp ginger powder
1 tsp cinnamon and clove powder
1/2 cup red wine
6 eggs
3/4 cup vegetable oil
1 tsp baking powder
1 tsp bicarbonate of soda
2 pinches of nutmeg

Best if you start the night before. Place the raisins , the shredded candied orange peel and the cashew nuts in
a bowl and add two thirds of the dry spice mix and pour all the wine over and allow to be soaked in at least
 for 6 hours.

Start with the caramel. In a heavy bottom pan place 3/4 cup of the sugar and place on the stove and heat.

Heat ,stirring constantly till the sugar crystals melt and look like honey. Reduce the heat and stir till the sugar acquires a  coppery sheen. Quickly add 1/4 cup of water and stir.
The caramel hardens but with tender love and a strong hand it will melt again. Turn off the heat and allow it to cool down to room temperature.

Turn your oven on to 170 C and grease and flour and line a 3 pound cake tin with paper. I used a 2 lb and a 1 lb tin...

I now follow Rose Levy Brenabaum's theory that sifting is not enough, you need to mix the dry stuff together. So I whisked the flours ,the baking powder, the soda bicarbonate and remaining spices together with with a balloon whisk and set aside.

Whip up the eggs and the sugar in a large bowl.
Add in a third of the oil and then blend in a third oyf the flour mix. I use my  electric blender...my muscles are better built with the help of my yoga mat.
So...

Third time round you need to quit the blender and use  muscle power...the batter is now doughy, time to add the alcohol enriched fruity mix and the now thickened caramel. The caramel now feels like molasses...only a wee bit paler.

Tip the dough into the prepped tins half full and pop them into the oven.
At least 55 minutes for the small tin and around 75 minutes for the larger tin...We had a power cut for about 6 minutes so my big cake sunk a little in the centre, but otherwise the cake was amazingly soft for a fruit cake. Mine took 73 minutes -by the clock.

Test the doneness of the cake with a skewer and if the skewer comes out clean, pull the tin out and leave it to cool. One tin was attacked as soon it was cool enough to tip over while the other one waited for 6 hours. Run a knife around the edges and turn out the cake. Peel off the paper-yes, that's why the paper was needed.

Slice and serve with coffee or green tea to balance the sweetness of the cake.
Awesome.

I took some to school and gave away some to the neighbours and a friend's...after all the diet would really suffer ...
Mine was mostly for the sniffing pleasure.
Caramel...
Sends notes of dates and walnuts and old days gone by.
the raisins add just that hint of tartness to this very straight cake and the cashew nuts were just lost...I added really few,as you know,I'm not a nut person at all.

And the wine left an aroma and a taste of heady decadent flavours.
Christmas came early...
PS I had soaked much more than what was needed for the cake, and we ended up snacking on that...double duty of good nuts and good wine...
Way to go...
So more soaking of fruits...

This cake evokes good memories . Of a happy childhood and the aromas of mums cakes baking in the oven, when cakes were uncomplicated and wholesome and there was no stress to frost cakes. The character of the cake was in the flavour ...only the flavour!
This recipe may sound and look familiar to many...it is a mish mash of the recipes tried over a long time...
The caramel comes from my Egg less Date Cake and the soaking in wine is a result of an unfinished Red Wine Bottle- cant bear to waste good fruit...
And eggs are good for you...I like oil better than butter-its always there and saves the whipping up and waiting for softening...
Whole wheat flour is the best...

So go ahead and bake a cake with a good character.
And enjoy without too much guilt.Remember, if it has the tendency to sit on your waist...share it-let the next person work out.

So what are you baking today???

Beetroot in all its glory- buttermilk ,Chaas or Lassi.

Posted on 08:18 by Unknown
Sun shine and a lazy winter Sunday morning...
The prospect of three holidays-today being the first after a hard days work...its been three weeks for head banging, back breaking, throat scratching organisational miracle that all 800 children got on and off the stage without breaking their teeth or bones...
Two holidays are small compensation, but compensation nonetheless...
Lazy hazy day today...
Watching the parrots and pigeons and squirrels fight over a bowl full of Bird seed and watching the veggies grow in my farmville-esque patch...
Its beetroot time.

Beets  in all meals and now In yogurt.
Beetroot buttermilk or Chaas or lassi.
Purely organic and fresh from my veggie patch...
This is healthy to the extent of an overload.  You may dilute the beetroot puree with as much or as less yogurt as you desire. ..

For the

Beetroot in all its glory- buttermilk ,Chaas or Lassi

You need

1 medium sized beetroot
1-2 cups of yogurt
1 inch piece ginger
2-3 cups of water
1 clove garlic
1 green chilli
Salt to taste. .I used black salt

For the tempering
1/2 tsp olive or canola oil
1/2 tsp mustard seeds
1 sprig curry leaves
1 tsp chopped cashew nuts

Wash the beetroot properly to remove all sand and dirt. Slice off the residue or the leaves and stab the beetroot a couple of times with a paring knife...
Baby, will it bleed or what. ..
Fresh out of the earth and just washed.
Don't bandage it yet. ...just pop it in to the microwave at full power for 5 to 7 minutes.
After it has bled some more on your plate allow it to rest in peace till it cools.
Prepare for the funeral. ..this backseat commentary came from the blood and gore loving sweet child.
Once the beetroot is cool you can peel off the outer skin and chop it roughly.

Place the pieces in your blender with the yogurt, ginger, garlic and the chili and season with the salt .
Blend this with the help of some of the water. Taste and add more water and or yogurt to your taste.
Strain through a soup strainer into a jug or a punch bowl.
In a small sauce pan or a tadka pan , heat the oil and let it smoke lightly add in the mustard seeds and let them pop,add in the curry leaves and the cashew nuts in quick succession.
Pour over the beetroot Chaas and allow the tempering to seep in and the flavours to merge. ..
If you intend drinking it in the sunshine. ..you can chill this or else have it warm...
Remember to share this with someone. ..too much of good red healthy stuff will make you wonder when you get off yhe thunder box or pot... in the morning...

Next, I'm planning to bake the beetroot in a cake Red Velvet the real way...

So what are you baking today???.

Island Pineapple-If its Bacardi...its a BREEZE...

Posted on 13:10 by Unknown
Baby did a BAD,BAD thing...
Baby just wanted to look at the competition...
In technicolour...
Baby who...
Me!
Baby just wore a new pair of contact lenses...Green!And all appears hazy green for the moment.
All appears not so great...but the minute Baby sees this sign...

Baby becomes happy!
Very happy...
Cheers to the guys at Indiblogger!
I wasn't inspired to write for the Dabur blog competitions...despite the fact that I work around a truckload of truck size children who absolutely adore the school canteen and the Aloo Patty it sells...
But I signed up for the Bacardi Breezer in the middle of the night...
I got up and checked the time and the my gmail(middle of the night its force of the smart phone addiction!) and there I saw it...and my heart just skipped a beat...there was only one spot left on my fave flavour and I had to have it...
So I trapezed into the washroom and sat on the throne and logged on to indiblogger to get the last place...and then calmly l went back to sleep ,thinking I had dreamed up a whole years supply of the breezer in pineapple...
Today when  I got a warning mail...
Yikes...
I have reality to catch and an annual function with 24 boys under my supervision to supervise and make sure they get on and off stage without breaking any of the props on the way...
So Baby ie..me just wanted to check out...but was denied and was told that "Baby did a BAD,BAD thing!"
Checked out the page  ad found that the I have less than 18 hours to post...ill have to complete it from my throne again tonight...
Less than 5 hours to be exact...
After the stage annual function, a lot worse for wear,I lie here in bed dreaming images of warm climes and the fragrances of frangipani and pineapple and coconut and the best way to string them together. ..alcohol.
A breezer is what I like best ...the same as what life should be...4.6 percent alcohol in a fruity ,fragrant, sweet, fizzy drink that brings a smile to your face from the word go...
I like beer too...but then again there's bitterness and a million calories there...
As if life wasn't full of regurgitating bad tastes and bad people...
Ok,granted the breezer is not exactly calorie free but it compensates with an awesome taste.
The breezer drinker will hardly be a couch potato munching on crisps, more likely will be loud music and sand and breezers that go together.
Party and breezers go hand in hand...
One doesn't have to have a reason to party but a breezer in your hand is good enough reason for a party.

And coming to my favourite flavour. ..
Pineapple.
Sweet and awesomely yummy- Island Pineapple. ..
The minute you uncork the bottle, the aroma of happiness floats by...
Loud music and a chicken salad as the best accompaniments to an island pineapple breezer.
Healthy it is...alcohol ensures no bacteria thrive. ..so clean and carefully bottled.
The rum  will ensure a blissful state of mind removing any traces of painful reality and will take away all inhibitions...so you can dance like no one is watching, sing like no one is listening and love like there is no tomorrow. ..

Cheers to a wonderful drink that is the harbinger of so much freedom.
Cheers to the Bacardi Island Pineapple breezer.
A promise of a wonderful time- whether alone or with friends. ..
And another thing to bring a smile to your face. .Breezer India
Try  it for some happiness at your fingertips.

Thailand on my Mind Air Asia...

Posted on 10:07 by Unknown

I love deadlines. I like the whooshing sound they make as

they fly by.
                                                                                                     Douglas Adams

Deadlines and more deadlines...
I should know...
I count my minutes by deadlines.
And then I bemoan pressure and stress...
I have been absent from blogosphere...not writing or blogging because the words in my head have been protesting.
Protesting because of overwork and too much noise.
Too much noise is what I am suffering from.
I seem to be surrounded by din...the din of voices...
Shrill,squeaky,gruff and many more varieties...
Screaming and shouting and calling out and guffawing and whispering and yelling and yelping...
Of PA systems that go deaf and dumb and mute...
No,I don't work in a mad house or in a zoo...
I work in a SCHOOL.
A school full of boisterous children and( no animals around)and trains playing peek a boo...rather BOOOOOOOOOO...
The school I work in is next to the railway line...an arterial rail line of the Northern Railways,Indian Railways .
Busy tracks,never a dull moment.
And then there is this fact that I teach history and economics and political science and mathematics and love telling stories and so have to talk nineteen to a dozen...
And then there is the preparation for the annual day celebrations going on...
And then at home I have sweet child and sweet dog and hubby dear at home who love to talk and watch movies and listen to music...
And the music has to be loud.
So what I crave is SOLITUDE!
I want to just bury my head in the sand so that I can evade the sound of people talking...
I can just not hear the sound of the whoosh of a train ...
I am so ready to book myself on a trip to Bangkok..
Why Bangkok...Dream Asian travel Fair and also ‘World’s Best Online Travel Fair’ ...
Need I say more.
I am not going there for the shopping or the food.
No sir,I am on a diet...as always and I'd rather not fill my cupboards any more with things.I want to spend the money I have on travel and food and things.
Yes,I am only human.
For the silence I crave ,I'd love to go to the Grand Palace Bangkok, the home of the kings of Siam since the 18th century.Read all about it in Anna and I.
google images
I would love to visit the many temples in Bangkok...Wat Phra Kaew, Wat arun,Wat Suthat and so many more ,just to pass some time in the silence and serenity of the temples dedidacarted to the Budha. Its not that our temples are not peaceful and serene ,but these are Quieter...
google images
The next place I'd love to visit is Siam Ocean World...
Just to be amazed zt the beauty of the water world...
The beauty of the fisha nd the serenity of the water that surrounds it.

google images

I wouldnt mind a trip on a boat to the flower market to be blown over by the scent of fresh flowers, and the colours and the varieties....
google images
All the images are amazing, just wandering through theby lanes of the market will be like walking into a HD TV screen...with the ability to touch and feel and smell the flowers...
Wow.
But I wouldlove to go back to the Wats. Make my spiritual reconnect and burn some incence sticks and then offer some prayers...
google images
I love the peace that the Buddha symbolises...
And then when my ears have healed...
I'd love to return to the madness of life...
China town and then one night in Bangkok would not be complete without  a nightclub...
So I'd love to party...
get drunk on life and vodka nd then dance like no one is watching me(of course hubby dear would be there to stand guard-you didnt think I 'd go alone ...did you??)
No fun in life if you don't share the sorrows and the headaches and the happiness...
So tempting...
But the rail road beckons...
School day tomorrow.
Wonder when my school days will end???

Lets keep the dream alive...and dream on.
Makes life more interesting and more fun...
What if children could talk all they wanted and not be heard??
What if I could park an aircraft in my garage??
What if  fares were always so cheap???
What if???

Chocolate Ganache Patakhas err Cracker Cupcakes with White Rum Vanilla Centres and Ganache Toppinga

Posted on 06:10 by Unknown

Complications.
Totally non existent here.
I have never made a cake without any whipping or whisking or stuff before, but a cake that is ready in just three steps. ..
WOW!
This is one of those. Surprise. .almost like a pathaka...
A small bomb. .cracker. .For those of you of the non Indian variety...
A patakha will be one small burst of the wow factor. ..
In North India good food, pretty girls, great jokes and of course the diwali crackers amongst other things are called patakhas...
So these cupcakes were real crackers...

Crackers of taste.
Moist and soft and chocolatey...
The ganache topping and the real bomb-the vanilla filling inside the soft as butter cupcakes...
Yumm!

for 18

Chocolate Ganache Patakhas err Cracker Cupcakes with Vanilla Centres and Ganache Topping...

you need

2 cups flour
2 cups powdered /ground sugar
1/4 tsp salt
1/2 cup buttermilk
1 tsp baking soda
2 eggs
1 tsp vanilla essence
1 cup melted butter(2 sticks )
4 tbsp cocoa
1 cup boiling water

2 cups whipped cream to which 1 tsp white rum has been added(totally optional, but if you want the Fizz of the pathakas...well...)
3 cups Cold Chocolate Ganache whipped to peaks
Sprinkles and a few silver balls for decking up the cuppies

Preheat your oven to 170C/325F. Line the muffin tray with cupcake liners.
Mix the melted butter with the boiling hot water and the cocoa powder and heat to a simmer. Take off the heat and then cool .
The butter milk(either use butter milk or milk to which a tsp of vinegar has been added),mix with the baking soda/soda bi carb...this will have a slight fizz now beat in the eggs.
Beat the flour, sugar and salt together.
Yes BEAT!
According to studies and the Cake Bible and Rose Levy Brenenbaum, its better to beat as the dry ingredients do not mix as well with whisking or with sifting.
Lots of Chemistry at play ,but the science makes sense.
Into the dry mix,add the egg and buttermilk mix and slowly blend together. Now pour in the cocoa mix and mix fast.
You may need a balloon whisk or your beater to the same...
Its just easier.
The batter will be thick, spoon out equal amounts into the cuppcake moulds and pop into the oven for 20-25 minutes.
The cuppies will be moist, stick in a toothpick and check to see if the cuppies are done.

Bring them out of the oven and set aside to cool for 5-10 minutes in the muffin tray itself.
Bring them out and set them to cool.
Protect the cuppies while they cool...I lost almost six to sweet child and the errant dog who begs for sweet and chocolate with his dopey eyes...
So I had to bake another batch...

Once cool, whip the cream nd mix in the rum if you are using it...other wise the cream alone will suffice.
Scoop out the centre of the cupcake  and save the centre for munching on later.

Fill the drunken cream into a piping bag an d fill the gaping hole with the cream...

If you haven't made ganache before...for 1 cup of ganache
100 gms cream
100 gms cooking /dark chocolate

Chop the chocolate into small bits. Place the cream in a sauce pan and heat till it comes to a boil and pour onto the chocolate.
Mix well to allow the chocolate to melt.Cool and Cover and use as needed.
For this set of cupcakes, make the ganache at least 6 hours before and chill in the fridge.
Now all you need is to whisk it like you whisk cream.Till soft peaks form.
Fill into a piping bag and pipe stars or rosettes and ..
Sprinkle over the stars to decorate the cuppies...

Gift or enjoy...

The Promise of Forever and Ever...Platinum and my platinum day of love

Posted on 02:33 by Unknown
Listen well while I tell you a story...
Of a boy and a girl in the spring...
How a first flower burst into glory...
And so shown the platinum bands of love...

Love.
And marriage.
It's been almost 20 years.
That long.
But our platinum day of love came much before we were married.
Hubby dear and I have known each since December 1993 when we were naive and gauche and young...
He was just starting out on his military career and I was getting an education in university. I was preparing for a career in management. Studying and prepping 24x7 and then even managing to get admitted to an institution of my picking.
Time was a passing and  not yet hubby dear and I were making promises to each other.
Promises of spending our lives together.
Promises of being true and faithful to each other.
Promises of being together, forever.
This song always brings memories and a smile ...
Forever and ever -Julio Iglesias...

And then came the realisation that the parents were not really approving of the relationship.
Circa 1996.
My mother was now beginning to vociferously voice her disapproval. What she had mistaken to be just a friendship converted into a crush had manifested itself as a serious lovey-dovey kind of situation.A situation that daddy dear was blissfully unaware of till then.
Then came the bombshell...
Not yet hubby dear wanted to meet with daddy dear and just take his approval and blessing before both the sets of parents could meet and formalise things. He obviously put the cart before the horse because my daddy simply and very politely asked him to stay away from me and consider the relationship non existent from that moment onwards. And I was very categorically told to stay away from the love of my life and concentrate on making a career for myself.
Arguments and pleading and howling and tears had no effect on him. He was adamant.
Being a naval officer himself ,he had no affinity for the army and the men...(After I got married,I realised that this inter forces rivalry is ingrained from the moment the men begin training...so...)
A few friends pitched in to try and connect us through conference  calls or for pseudo outings ,but it never could really work...
Leave from the call of duty and time together was limited and I was being watched...
Where I went,with whom I went...
Never before had I been questioned or not trusted and that hurt.
And then the bombshell...
One night I was caught by the parents trying to call not yet hubby dear and was categorically told,Hindi film style that I was not to contact him ever again. There were tears and threats and pain and the painful realisation that no love was worth causing the parents so much pain...
That was when I called not yet hubby dear and told him that no matter what happens he and I would never meet nor speak with each other or even remember the times we spent with each other.
The pain I felt at that time when I tried to sever all ties from him was almost physical. I felt as though I was slowly bleeding away.
He tried to contact me a couple of time s at home but to no avail...
At last he managed to get through to me at a friends place...
Sounding desperate ,he was ready to promise me the moon..
He pleaded and promised and cajoled and it was an emotional tsunami all over again...
That was our Platinum Day of Love .
The realisation that came to us during that one phone call that this had to be love and nothing else that would cut so deep.
It had to be love that would bring that feeling of abject misery on being away and that elation at just the thought of being together.

It had to be love when the strains of a syrupy love song would bring a smile or tears...
Something like I will be Right Here Waiting for you...
The clandestine phone calls continued for some time...
Then Dilwale Dulhania Le Jayenge was released.
The story of a boy and a girl being kept away because of parental pressure was so similar that I wept buckets during the screening of the movie...
And as it happened, the parents were not untouched by it either.
They realised that the love that I felt was indeed true and was not like a simple crush that would just disappear when the time for commitment came.
They asked to meet with the now in laws and our marriage was fixed...
Just like Simran's dad says to her at the station...
जा Simran ,जी ले अपनी ज़िन्दगी। तुझे Raj से ज़यादा कोई प्यार नहीं करेगा। जा Simran ,जी ले अपनी ज़िन्दगी।
One year later we were married.
Today ,we have been married 16 years ...
Its been a bumpy ride at places, but the best has been the getting up and dusting our behinds and moving on...
There is always sunshine and warmth and love to look forward to at the end of the road.
I'm not too fond of movies...remember I'm a Greys Anatomy and Ally McBeal kind of person, but I'm all for the Yash Raj Films and all the love they endorse.
यह कहाँ आ गए हम ,यूँही साथ साथ चलते। …
तेरी बाहों में हैं जानम मेरे जिस्मों -जान पिघलते।
Its been a long road,we've held hands and walked together and I know that one day,we'll sit outside on our patio...Grey haired and wrinkled and smile and remember the happy and trying times and the love that pulled us through.

I am not supposed to post pictures of hubby dear and stuff...but this bliss that the two bands of love..platinum is evident .
Even diamonds will not last forever.
But Platinum will.
The metal with the promise of eternity.
The metal which is as rare and as strong as your bond of love.
The metal which never tarnishes as your love and respect for one another.
The metal that is exclusive and elusive...just like true love...
Not every one can find true love.
Cherish this love with platinum...
Truly blessed are those who find true love...
Truly blessed are the ones like us...

So if I win no prizes, hubby dear will need to cement our bond further by buying the platinum rings.

The promise of eternity and laughter and togetherness is enough to help tide whatever comes my way. Our Platinum Day of Love stays with us every day and brings us together each day.
We have been blessed with a love so strong,it won over many hearts.
We have been blessed with sweet child to cement out bond even more.

I love that I can share this with all of my readers and hope that everyone finds their Platinum Day of Love.
This post is for Indiblogger's Platinum Day of Love contest.

True love doesn't have a happy ending.True love has no ending.

PS This is probably the first time I managed to post an entry to a contest without the dealines breathing down my neck...
Chicken Biryani for dinner...
OOh the trials and travails of being a married woman...Love Shuve and Chicken tandoori...
First you sink into his arms and then you end up with your arms in his sink...
Though the thought of platinum makes it all worth the while...

Smart Suraksha My Birth Right!

Posted on 09:33 by Unknown
Smart phones and smart women.
Indispensable in today's world.
No one can live without either a smart woman or in today's high pressure city life-a smart phone.
I'm a recent convertee...
It's been two months, and I really don't know how I managed without my smart phone . In fact I'm ruing the fact that I settled for a small phone.  My smart phone should have been bigger.
But then ,that kind of draws attention to the carrier of the phone.
The women are smart alright, but the cities are getting unsafe .
Bringing us to the objectives of this blog post.
I know baketitude is only to do with food but when I have a chance to be a part of a movement initiating safety for women, food has to wait.
I have been brought up as an independent, competent and capable woman. There is no task that I can't do (besides the obvious of course -I am not interested in displaying my physical prowess. ..I'd rather leave that to the men).
There is no road I can't travel or no mountain I cannot climb.
However after December last year ,when an innocent girl was gang raped in moving bus when the city folk went about their business. .. I'd rather be safe than sorry.

I have a few suggestions for women travelling out of their homes for work or for pleasure.

  1. Carry a phone. Fully charged. And also carry your charger with you. Almost everywhere you'll be able to hook your phone up and spike the battery.
  2. Ditch the headphones. Leave the radio and the music and the blissful ignorance of the road and traffic to those local yokels. Pay attention to your surroundings.
  3. Observe. Make sure you notice what people around you are  doing. Keep an eye on what people are doing and try to keep your reflexes sharp.
  4. Use public transport as far as possible.  If you are not able to use company transport or your private transport, stick to places where people throng. Metros or maybe cabs from reliable companies.  Make sure to note the number of the cab. Travel with people.
  5. The more the merrier. If there is someone who wants to create any trouble, he will avoid crowds.
  6. Avoid travelling alone. There is always safety in numbers. Its more fun when you have company and friends or colleague s around.
  7. Dress conservatively. Old fashioned, I know, but remember it's always better not to attract too much attention when you are not on familiar ground.
  8. Don't display your jewellery or high end branded gadgets or speak of anything that smells money. All that can be done among family or friends or where you know you are safe. So if you do possess a snazzy smart phone or iPhone or psp or Ipod--avoid showing off. There will always be someone lusting after it and thinking of ways to try to filch it from you for a few quick bucks.
  9. Be sober. Keep your alcohol intake to a minimum. Cocktails and tequila shots are good only when you know you are safe.  Carry a pepper spray or a pointed object in your bag that you can reach for fast.
  10. Be ready to scream and run. Make sure that your screech is audible and sharp . Feed in numbers like the police and your home on speed dial. You never know when you might need them. Know that you have to run -fast. ..even if it means ditching your Aldo shoes, you can always get another pair...
Install the Smart Suraksha App in your phone. Familiarise yourself with its working. Each phone has its own safety features. ..go through them.

Music and games and ebooks can be accessed at home.
When you are out , keep your eyes peeled and senses sharp.
    Be safe.
Your family loves and needs you.
Its your responsibility to look after yourself.

I am sharing my Smart Suraksha Tips at BlogAdda.com in association with Smart Suraksha App.

My Delhi Manifesto-My city ,My love and My life

    Posted on 08:53 by Unknown

    Mera dil, Meri Dilli.
    My city...and I ♥ Delhi.
I may not have been born in Delhi, but in all senses, I was born here. finished school, college, got an education, found my calling and my job and fell in love in this city.
    I have awesome memories here.
This is the city I call home.
The parents live here .I learnt to drive here and know the roads of Delhi better than I know any other place. Love the markets and the food here.
Every time I come to Delhi, the happiness quotient rises.
    Delhi has changed.
The number of people that now inhabit Delhi, could be the same as that in a small country. And we do have a government...
    Maybe parallel governments...
About 15 years ago,Delhi was madness. Traffic snarls and two hour long jams. Bad public transport and bad power cuts. Pollution and smog to kill a lot of people...
    Crime and an ugly skyline..
We have a lot to thank Shiela Dixit for. Because she was at the helm(maybe) today Delhi is City Beautiful.
The CNG brought down the air pollution, metro changed the public transport ,no more blue and red line buses and then the changes because of the commonwealth games have made Delhi an international city...
    But does it???
The skyline may have changed , but the city essentially has not.
The mindset of the people has not.
They still view women as an object,to be desired,to be ridiculed and to be possessed.
The Delhi that I want to live in,My Dilli must make a change.
The initiative must come from the government and the government must be strong enough to make sure its done.
My Delhi Manifesto will be something like this.

    1. More police men-Hire more police men and remove police men from useless duties of politicians and senior officials and let them do some policing for a change. Lighten their work load so that they are less stressed and more amicable and cooperative.
    2. Arm the men who ensure law enforcement-not just with weapons but also with strong enough laws that some ones uncle or son or relative does not get away scot free.
    3. Fine the public-ensure that the public follows traffic rules and keeps the city accident free by driving without speaking on the cell phones and that people don't litter .
    4. Sanitise known crime prone areas -Regular checks and raids by the police are mandatory to ensure the fear of Delhi police in the mind of the criminals.
    5. Make resident welfare societies responsible-encourage the RWAs and the citizens to volunteer to help make Delhi a secure city.
    6. Reduce traffic on the roads-Try implementing what the Greeks did...odd dates and odd number registration plates on the roads. We can maybe skip Sundays and public holidays ,but at least a few days of the week can be strict no car days on the roads.
    7. Hike up the tax on the number of cars per household- If a family has more than two cars per house hold, let them pay more an d more...after all family values get stronger when we travel together.
    8. Increase enrollment in night schools-try to educate the school dropouts and those who are uneducated ...education is empowerment after all.
    9. Street lights -More street lights so that no roads are unsafe.
    10. Trucks and heavy vehicles-must be routed out of Delhi...the immense traffic snarls that trucks and trailers just passing through Delhi cause can be avoided if they use a bypass.
    11. Public phone booths and chargers to help those who are stranded...
    12. Patrolling-More vigilant patrolling and CC TVs to ensure that an incident like Damini's Rape doesn't recur.
    13. Better Roads-the connecting roads should be free of pot holes and well lit.
    14. Mafia-punish and get rid of the land mafia, the parking mafia, the begging mafia, the drug mafia, the cartel of the politicians ...all those who make the city unsafe.
    15. Bribe-punish all those who take and offer bribes as well. The pay will never be enough but bribes are not an answer.

A free wifi or more malls and a  better looking skyline are not meaningful if the women and the senior citizens are not safe. A pollution free city will make a lot more children free from respiratory ailments.
    Let Dilli be safe again.
    Let Dilli be clean again.
I want to be safe in my city.

Smart Phones - Smart Suraksha,Personal safety and choices

    Posted on 10:30 by Unknown

I belong to the era when mobile phones just invaded normal life.I belong to the era when women were relatively free and safe in Delhi.
No I am not as old as Sheila Dixit, but I am not a gauche, young teenager any more.
I remember a time when travelling in DTC buses was the norm and Auto Rickshaw drivers were a little more trust worthy. The roads may have been less crowded ,but they were safer.
I remember a time when incoming calls cost 64rs a minute. When cell phones were as big as a novella and heavy.
Today,I am a smart phone user, where my smart phone is used only 10% of the time to make phone calls.
The apps on the smartphone seem indispensable.
But there was a time we could only dream of apps and smartphones.
    Amongst other things.
In this forum,I have a story to tell.
A story of three girls .
Three responsible girls who were brought up in responsible, loving and caring, educated households.
Three girls who dressed like normal teenagers and never stood out because of their flamboyant style...
This is an incident that took place on the Ring Road,Delhi way back in the early 1990s...
A regular day of college always entailed being back much before dark. But then there were some days when they were also allowed to let their hair down once in a while...
They were on their way back from Siri Fort in south Delhi towards Rajouri Garden...
If you have driven around Delhi in the time before it was band-aided with Flyovers and the Metro, you would remember that the road from Dhaula Kuan to Brar square was a lonely stretch in which it always made sense to speed.
At about 7ish in the evening, these girls were speeding home when one of tyres burst. Fortunately, managing to stabilise the car, they moved to the side of the road, tied up their hair and removed all traces of make up(after getting over the initial panic and screams) and got around to fixing the tyre.
15 minutes later, they realised that a couple of cars with men ogling out of the windows were surreptitiously slowing down.
One car stopped, parked and a young unlikely Galahad came sauntering to ask if we needed help.
It was then the girls wished they had something for their SURAKSHA...
No ideas about the Apps that would make situations like this easy to handle, they were only wishing they had a mobile phone to call Delhi Police...
    And answering their prayers...
A white Police gypsy just slowed down.
A cop asked in his typical Haryanavi tone..."Gaadi ka tyre panchare ho gaya ke chori?"
The gentleman slunk away in the meanwhile....
And then the policemen proceeded to help the young ladies replace the Tyre and be off on their way.
The girls sure wished they had a Smart Suraksha App with them to help them out that evening. Wisely dragging along a strapping, muscular friend...only to dtand guard while they changed any errant tyre.

I am a  smart phone user.
    Relatively nouveau,relatively excited.
I bought it and loaded it up with all my music and pictures and all my favourite episodes of Grey's Anatomy.
Yes I have added a memory card.
I don't particularly like slow  or slow processors.
But I've realised that the fun apps aside ,smart phones offer the users unique features that can be of great help at all times. I am discovering these apps and features one at a time.
My phone needs a Smart Suraksha App...So I can make sure I am safe...

I seek smart Suraksha to keep up with the times. The streets may not be safe, but I can keep myself safe.

I am participating in the Seeking Smart Suraksha contest at BlogAdda.com in association with Smart
    Suraksha App.
