BuckWheat Flour(Kuttu ka Atta) and Sesame Crackers-Navratri Recipe

Posted on 09:35 by Unknown
Navratri.
Seven Days and Nights of Celebrations.
Festivities...
A renewal of faith...
An awakening of the connection you have with the force that brought you to mother earth and has been nourishing your body and soul.

This period of seven days and seven nights is also good for your character. It teaches you control...detoxifies your body and gives you a chance to sample things you would not the whole year.
I have been fasting all seven days ,twice a year ,for the last seven years.Ordinarily, I need a cracker or a Marie biscuit with my morning cup of coffee.I can survive the entire day with just a couple of crackers or Marie biscuits.
For me, the fact that seven days I go without meat or carbs holds no issues. Totally doable.
I am happy with fruits and salads...that cracker or biscuit is what I miss the most.
I don't want to be eating fried mixtures available in the market,or eating dry fruit...absolutely pointless.
Why would I want to pump my system with saturated fats when I am fasting.
Big problem.
So what does one do???
Trial and Error!

The fasts allow one to eat pseudo cereals-Buck wheat flour.Kuttu ka Atta...as it is called in India.Good for fasts.Safe.
The last few days I have been experimenting.
Experimenting with the flour and various proportions and various fats.
Zeroed in on Extra Virgin Olive oil.(Yes ,I checked-olive is a fruit ,not a grain)
All using Sendha Namak(rock salt/salt allowed for fasts).
After 3 batches...
Hallelujah,or should I be saying Eureka!!!
When they went crack ,crack in my mouth...I was so, so happy!
I just had to share.

for the

BuckWheat Flour(Kuttu ka Atta) and Sesame Crackers-Navratri Recipe...

you need

1 cup Kuttu ka Atta/Buck wheat flour(a little extra to roll)
2 tbsp sesame seeds
1 tsp sendha namak/rock salt
1/3 cup extra virgin olive oil-use any fat you are OK with-ghee/oil whatever
2-3 tbsp hot water to knead

Pre Heat oven to 230C/475F.
In a bowl place the flour, salt and sesame seeds.
Pour in the oil.
Mix with your finger tips, and knead into a firm dough with the hot water.
Divide into three balls.
Flatten and roll with the help of the flour.
Roll out as you can. Thinner the better.
Whatever the shape, place the rolled dough onto the baking tray and bake till firm. Its difficult to get a round disc...any shape will do.It should be THIN!
Bring them out and cut into whatever shape you want to.Rather whatever shape they break into.
Back into the oven in a single layer, baked till they are nice and crisp.
You do not need to wait till they cool before you eat them.

Since this is made with sendha namak you can eat them whenever..as many times in the day.And if you don't eat salt...I made sweet cookies too...
Never say that the reason you do not fast is because you miss your morning fix of salt.
Enjoy.
Jai Mata Di.

I've got my salt fix.
And I am happy.
I can fast for some more days...

So what are you baking today???
