Vanilla Cupcakes and Chocolate Surprise with Orange Butter Cream Frosting

Temper tantrums!
Scolding and sulking!
All thanks to an exam which sweet child couldn’t be bothered to study for.


Sweet child had applied for all of the exams he could take for the Olympiad foundation. But as usual,he lost interest on the eve of the exams. He does consider himself a master of the written word and fancies himself to be the next Amish.
Just in case you don’t know..He is the man who wrote the story about the Melhuans and Shiva.
Well since I had been nastily accurate in pushing him to study…and I did…so I had some making up to do.
Imagine the plight of the women…have to make it up to the man and the child! But then they do their bit too…that’s what love and love for your family is all about!


So I made the vanilla Cupcakes with butter cream frosting that sweet child had been asking for.
On a whim…eggs on Thursday, big no, no!
But then what the hell!
The number of cupcakes and the mini cupcakes -the recipe said 12 cupcakes. I got 8 regular cupcakes and about 27 minis.
Easy , exactly as pointed out by my cake bible- 500 Fabulous Cakes and Bakes. I’m trying out the recipes one by one ,most of them are beautiful…I don’t blog about the flop shows obviously.





For the

Vanilla Cupcakes and Chocolate Surprise with Orange Butter Cream Frosting...



You need

½ cup/115 gms butter-soften
2/3  cups /95 gms icing sugar
3 eggs
1 ½ cups /195 gms flour
1 tsp vanilla
¼ cup milk
¼  tsp salt
75 gms chopped cooking chocolate-chocolate chips if you have them
1 ½ tsp baking powder


Pre heat the oven to 180C/350F and set out the cup cake cases. My colored mini cases are thanks to friend Ritu Sharma.

First things first, soft butter and sugar. I used icing sugar because it makes blending really easy.

Blend till mixed and then one egg at a time.


Sift the dry ingredients together .Add in the vanilla.

Mix in the dry stuff in three batches with the milk. Fold in the chopped chocolate.
I used a melon baller to fill the mini cup cakes.



The minis took all of 14 minutes to cook while the mega cupcakes(regular muffins) took 22 minutes.
Don't leave them unattended..you need to baby sit the cup cakes.
According to friend Bhavna,who dropped in just when the babies came out of the oven-this is the appropriate size.two tiny bites...all the pleasure and no guilt factor...lolzz.

Once they were out...the frosting! 


General rule of thumb for Butter Cream Frosting- one art butter and three parts icing sugar.
I used 50 gms of sugar to approximately 150 gms of icing sugar. I would have used less butter but it would have got lost in the blades-er of the beater.

Beaten, but still not together.
To bring it all together I added  about 2-3 tsp of warm orange juice-straight out of tetra pack.
All for the love of sweet child. Yes, he was also flogged like a race horse…made to run in the evening to burn off the calories. No guilt overload for me!
This song...is my current fave-why people don't give Abhishek Bachchan a chance- I wonder? I think he has tremendous potential. 
Like these mega muffin size cup cakes and the mini me's.

What an amazing change the tiny multi colored sprinkles and the sweet tart Easter bunnies can make to the cup cakes. Thanks Jiya masi for getting sweet child so addicted to sweet tarts.



The cupcakes hardly took any time to bake or to frost...but they were much appreciated. And I had been missing the sticky kisses of appreciation…both of us were ecstatic.


We are now counting down the days ...sweet sister Jiya is coming back home after almost 2 years ,this time with a tiny little imp called Sanskriti.Waiting to dance to her tunes...
Babes...masi loves you lots.
