Thumbprint Cookies

Posted on 01:46 by Unknown
Finally...
Finally made thumbprint cookies.....
Been reading about them all the time and have been asked to make them by sweet sis o'mine....wish she lived nearby enough to taste them.....
This is again from my bible....Fabulous Cakes And Bakes
With minor modifications...I'm not that much a fan of nuts in cookies or cakes...I like them a s they are. That way they can be appreciated for themselves only....no pressure to perform...rather outperform the other ingredients.
Just with a bit of jam.....I tried to add more.....that glazed the cookies and just made a mess on the foil, but then that's why we use AL foil ,no?
End result-brown,glazed,sweet and yummy...
And my cup of jam runneth over!
All it needed was some love....
quick and easy....only bit...today we fast ,so no eat ,no drink...will have to wait till tomorrow.
for the
Thumbprint Cookies...
you need

75 gms butter,soft
45 gms sugar
1 egg ,separated
1/2 tspn vanilla essence
2 gm salt
1/4 tspn baking powder
110 gms flour
30 mils jam-strawberry,mixed,raspberry whatever berry you have available....

All you need to do is ,get the sugar in a big bowl and add the softened butter.
Now bring out the blender, you could ,if you will grind the sugar ....but I was feeling a little lazy-well a lot!
To the above messy mix add the vanilla and the yolk from the separated egg.
Now sift in three quarters of the flour, salt and baking powder mix.
And blend with the blender.
Now add the rest of the flour and quickly bring together into a dough.
Chill the dough a while ,and bring it out whenever you are ready to bake. Then pre heat oven to 180 C or 356 F.Once you are ready whip the egg white lightly...you just want a glaze.
Make 1 inch balls out of the dough,I got 11...always like this ,either 13 or 11.Never a perfect doz.Dip them in the egg white, place them on the foil and make a thumbprint.Yes ,that's Nail Art!
Baked for 10 minutes....
I whipped up the jam ,you can the fancy preserves, and added a dollop on the imprint .The dollop was a bit extra,a wee bit will suffice.Back in the oven for 6 minutes.
These were a little pale for me...I wanted them darker....but the AL foil messed up ..so the pic is after the plating.
Like this.

Only now,we wait for the moon-Literally....Moon Rise tonight Ranchi after 2030 hrs....,while thirst and the aromas of vanilla and jam drive us insane.
Try this for a quick fix.

So what are you baking today???
